Kale and Chickpea Baked Eggs













     Ain't it grand when you have a leisure morning to putter in the kitchen and throw together a hearty breakfast that's healthy, yet feels suspiciously like comfort food!?  Nuthin better !!!  On those rare occasions, feel free to relax and experiment with new flavors, and pull out what you have in the cupboards. Plus, it's nice to go high protein and vegetarian for a change.  This dish has 385 calories, 26g carbs and 26g protein, per serving.  Happy Morning  ;)

Ingredients~
1 Tablespoon EVOO
1 pound diced onion
1 heaping teaspoon chopped jarred garlic
Dash Sriracha
4-2oz Meatless Breakfast Patties
1 can 15oz Garbanzo Beans
1 can 7oz sliced Mushrooms
2oz fresh torn Kale
4 large Eggs
1 Tablespoon shaved Parmesan
1 diced Roma Tomatoe

      Add EVOO to hot skillet, then add diced Onion, Garlic, and dash Sriracha to desired level of heat.  Cook til lightly browned, may take 20 minutes or so.  Add Meatless Breakfast Patties till heated thru, and break into small pieces with spatula.  Then add Garbanzo Beans and Mushrooms til heated thru. Next add torn Kale and heat til wilted.  Transfer mixture to Pam sprayed 8 X 8 pan, and crack 4 eggs on top, sprinkle with salt and pepper, and bake at 350 for 9 minutes, or til whites are cooked.  If you need to trap the heat in to cook the whites, then cover with aluminum foil.  Remove and top with diced Roma Tomato and 1 Tablespoon Shaved Parmesan. Makes 4 servings. Enjoy  ;)
