Grilled Swordfish and Pineapple

     I love the warmer weather because it means its time to fire up the GRILL !!!  And luckily, I live with the Master Griller !!!  We love fish, and especially the flavors that outdoor cooking brings!  And what could be better than grilling fish and fruit together!?  There are so many marinade combo's out there to choose from, and I just decided to throw a few things together that were in the cupboard!  Let your imagination run wild, you can't go wrong as long as you cook on the grill!!!  Cheers  ;)

2 Tablespoons Organic Maple Sugar
2 Tablespoons Organic Soy Sauce
1 teaspoon Mustard
1 teaspoon White Cooking Wine
Swordfish Steak
Pineapple Ring

     Mix Marinade ingredients and brush on Swordfish while your coals are heating up to the grey white stage.  When coals are hot, spread and place Swordfish on grill and brush with Marinade again.  Close lid and cook 3-4 minutes, flip and brush and close lid for another 3-4 minutes.  Check for doneness, and if necessary flip and brush one more time.  During the last couple minutes of cooking, add the Pineapple rings to the grill til browned on each side, watching carefully not to burn. Remove when done and Enjoy  ;)
