Chocolate Covered Coconut Cashew Truffles

Sugar free Truffles .... WWWWHHHAAA !!!???  Welp, its true !!!  Using my Coconut Cashew Quest Bars, I have made the most wonderful little treats !!!  And now, you can too!!!  These are only 39 calories, .9g carbs, and 2.76g protein per truffle.  Very simple to make so I hope you will get brave and try it out !!!  :)

1/2 Tablespoon unsweetened Cocoa Powder
1/2 Tablespoon Coconut Oil, melted
1/2 Packet Stevia
1 Coconut Cashew Quest Bar
8 Cashew Halves
1 Tablespoon unsweetened Coconut Flakes

     Cut the Bar into 8 equal pieces and lay a half Cashew in each one, press down and roll into a ball around the nut. Dip in Chocolate and rest on wax paper, repeat with remaining pieces and set in freezer 5-10 minutes til set up and hardened.  Repeat process, but after rolling in Chocolate a second time, then roll in coconut while still wet enough for adherence. Repeat 7 more times and if there is remaining Coconut then you can use to sprinkle on top. Store in refrigerator if there is any left !!!  Enjoy  :)
