Squash Cannellini Kale Salad with Capers and Parmesan










     I just love a hearty salad with loads of flavor and a tangy bite!  This recipe fits that bill !!!  All for about 250 calories. Perfect with a grilled meat, we had Grilled Pork Chops with our salad.  And, it's just right for a warm summer evening!!  ;)

Ingredients~
1 small Zucchini
1 small Yellow Squash
1/4 cup lemon juice
1 packet Stevia/Truvia
Dash Salt
Dash Pepper
1/4 cup EVOO
1 Tablespoon Capers
1 can ( 15oz)  Cannellini Beans, drained and rinsed
4 cups torn Kale
1/4 cup shaved Parmesan

     Trim the ends of the Zucchini and Squash, and shave slices with a vegetable peeler or Mandolin slicer.  Place in bowl of ice water for 15 minutes to get crisp.  Afterwards, drain and pat dry.  Meanwhile, in a small bowl, whisk together lemon juice, stevia/truvia, salt and pepper.  Slowly and steady stream in EVOO whisking constantly til combined.  Stir in Capers.  Divide Kale, Zucchini, Squash, and Bean into four portions and drizzle with Vinaigrette, then top with Parmesan.  Enjoy  ;)
