PB2 Chocolate Truffles

     In this recipe the instructions call for you to divide the batter into four equal parts, ... but the reason there are only THREE in the picture is because somehow mysteriously there was one that didn't make it to the photo opp.... oooopppps  :0  Things happen ...  Anyhoo, you can have a whole batch of these PB2 Truffles for only 160 calories, 5.5g carbs and 17g protein... ARE YOU KIDDING ME !!!???  ... once again, I'm a GENIUS !!!  Why oh why didn't I think of this before !!!  This is the perfect afternoon snack when those sugar cravings hit ( and did I mention there is no sugar in this recipe ... # WINNING).

2 Tablespoons PB2
2 Tablespoons Peanut Butter Protein Powder
1 1/2 Tablespoons Almond Milk ( 30 cal/cup )
1 teaspoon Coconut Oil
1 teaspoon unsweetened Cocoa Powder, plus extra to roll Truffles in
1 packet Stevia
Dash Cinnamon
Dash Vanilla
Dot of Peanut Butter for garnish, if desired
4 Grain Sweetened Organic Carob Chips for garnish, if desired

     Mix PB2, Protein Powder, Almond Milk, 1/2 packet of Stevia, dash of Cinnamon, and drop of Vanilla~stir til smooth and chill til solid.  After chilled, divide into 4 equal ball and roll to form circles.  Meanwhile, melt oil and then stir in other 1/2 packet Stevia and cocoa powder.  Dip chilled balls in chocolate mixture and roll in extra cocoa powder while still wet, repeat with other 3 PB balls.  Repeat this process one more time and garnish with a dot of Peanut Butter and a Grain Sweetened Organic Carob Chip if desired.  Enjoy  ;)
