Quinoa Pizza Bites

     Do you want a fun dinner in a jiffer!!!???  Try this easy breasy Pizza Bites that will please everyone in the family !!!  If you want to add a little more protein then shred or grind up some cooked Chicken Breast and throw it in the bowl!  As is, without sauce, each bite is 30 calories, 2.7g carbs and 2.1g protein, makes 48 mini muffin bites.  Feel free to get creative and add your own pizza ingredients to personalize to your hearts desire !!!  ;)

1 cup uncooked Qunioa
8oz Orange Bell Pepper, diced
2 large Eggs
8oz diced Yellow Onion
1 cup shredded Mozzarella Cheese
2-4oz cooked jarred Mushrooms, diced
Heaping teaspoon chopped jarred Garlic
2 slices cooked and crumbled Turkey Bacon from the meat counter at Fresh Market
1/2 cup fresh Basil, chopped
15 slices Turkey Pepperoni, diced
4oz Cherry Tomatoes, diced
1 teaspoon Salt
1 teaspoon Oregano
1 teaspoon Chili Powder
Shredded Parmesan, for garnish is desired
Pizza Sauce for dipping

     Place the Quinoa and 2 cups water in pot, cover and bring to boil and reduce to simmer for 20 minutes or til tender.  Mix all ingredients together, except Sauce and Parmesan.  Spray mini muffin tin that holds 24 with Pam and stuff each with mixture.  Top with slight sprinkle of Parmesan if desired.  Bake at 350 for 15-20 min and cool 10 minutes before removing from pan.  Serve with dipping Sauce and Enjoy  ;)
