Ganache Keto Cheesecakes







     Decadence at it's finest, my Ganache Keto Cheesecakes are dressed to impress.  Each of the six treats are only 182 calories, 10g carbs, .7g fiber, 8g sugar alcohol, 1.3g net carbs, 3.5g protein and 17.5g fat.  So, the next time you are craving something scrumptious, give these little dandy's a whirl.  :)

Ingredients for 6 Cheesecakes~
4oz Cream Cheese, room temperature
2 Tablespoons Sour Cream
1 jumbo Egg
2 Tablespoons Lakanto Monk Fruit~use code Paige20 for discount

1/4 cup Heavy Whipping Cream
2 Tablespoons Lakanto Confectioners Monk Fruit~use code Paige20 for discount
Dash Vanilla
1oz unsweetened bakers Chocolate, chopped

1/4 cup Heavy Whipping Cream
6 fresh Raspberries

     Cream first set of ingredients til creamy and smooth, add batter 3/4th full in six silpat lined cupcake liners, bake at 375 for 20 minutes.  Remove and chill for several hours or over night.  When ready to frost, using second set of ingredients, bring Cream, Confectioners and Vanilla to light simmer, stir in Chocolate til melted and well incorporated.  Add one Tablespoon to top of each Cheesecake, set in fridge to chill.  Lastly, using third set of ingredients, beat Cream til thickened and add a dollop to each Cheesecake and garnish with a Raspberry.  Enjoy  :)



Keto Macadamia Nut Cookies








     Ring in the day with a few Macadamia Nut Cookies to get your motor running.  Each of these babies are only 69 calories, 4.6g carbs, 1.8g fiber, 1.9g sugar alcohol, .9g net carbs, 1.7g fiber, and 6g fat.  I think 6 of these would make the perfect breakfast or afternoon snack.  Let the fun begin!  :)

Ingredients for 32 cookies~
1/3 cup Butter, room temperature
1/4 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout
2 jumbo Egg, room temperature
1/2 cup shredded unsweetened Coconut
1/4 cup Chia Seeds
1/4 cup ground Flax Seeds
1/4 cup chopped Pecans
1/4 cup chopped Macadamia Nuts
1/4 cup Almond Flour
1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips
1 teaspoon Baking Powder
Dash Salt
Dash Cinnamon
Dash Vanilla or Butter Extract, or both

     Add all ingredients to mixing bowl and stir to combine, or use beaters til well combined.  Using Tablespoon, measure out 32 cookies and place on silpat lined cookie sheet, bake at 375 for 9 minutes.  Enjoy  :)

Keto Cream Cheese Nachos








     If you like the idea of a buttery smooth nacho experience, then this is something you must try out...pronto!  Super simple and btw, ...my feelings won't be hurt if you embellish any of the toppings!  This entire recipe is only 288 calories, 1.9g carbs, .4g fiber, 1.5g net carbs, 29g protein and 16g fat.  Don't wait for a special occasion, make these right now!!!  :)

Ingredients for one serving~
1.5oz Carolina Gold Nugget microwavable Pork Rinds (purchased from Amazon, this needs to be a staple item in a low carb diet~sub with pre-made Pork Rinds)
1oz/2 Tablespoons Cream Cheese
1 Dill Pickle Spear, diced
1-2 Tablespoons diced Purple Onion
1 Tablespoon finely diced Orange or Red Bell Pepper
Dash Salt or Black Truffle Salt
Dash Pepper

     Cook Pork Rinds according to directions.  Lay out on plate to cool.  Meanwhile, add Cream Cheese to baggie, microwave for 10 seconds, snip corner and drizzle on Pork Rinds, top with Pickles, Onions and Bell Pepper.  Season as desired.  Enjoy  :)

Keto Maple Waffle Pancakes








     Pancakes?  On Keto?  Yep, you got it right!  To make you even more of a believer, each serving is only 301 calories, 23.5g carbs, 16.5g fiber, 1.5g sugar alcohol, 5.5g net carbs, 18.5g protein and 19g fat.   Keep breakfast fun with this stack of yum!

Ingredients for two servings~
1 Quest Maple Waffle Protein Bar
1/4 cup Almond Flour
1/4 cup 25 calories Cashew Milk
2 Tablespoons ground Flax Seed
1 Extra Large Egg
1 teaspoon Baking Powder
Dash Vanilla or Maple Extract
Dash Cinnamon

1/2 Tablespoon Butter
1 Tablespoon Choc Zero Maple Syrup

     Break Protein Bar into small pieces, bake at 350 for 5 minutes, cool and grind to powder in Magic Bullet or Blender.  Add remaining first set of ingredients and continue to blend til well incorporated.  Add a scant 1/4 cup of batter to Pam coated skillet, cook thru on each side, repeat three more times with remaining mixture.  Stack and top with Butter and Syrup, half the stack is one serving.  Enjoy  :)

Keto Chocolate Chip Cookies








     The keto lifestyle is code for all things are possible!  My Keto Chocolate Chip Cookies are proof of this.  Each of the 22 cookies are only 53 calories, 5.2g carbs, 1g fiber, 2.7g sugar alcohol, 1.5g net carbs, 1.6g protein and 4.5g fat.  Name one thing you are missing on Keto!?  ...thought so

Ingredients for 22 cookies~
1/4 cup Butter, room temperature
1/4 cup Lakanto Golden Monk Fruit~use code Paige20 for discount at checkout
1 Extra Large Egg
3/4 cup Almond Flour
1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips
1 teaspoon Baking Powder
Dash Salt
Dash Cinnamon

     Add all ingredients to bowl, mix with beaters til well incorporated, drop by level Tablespoon on silpat lined cookie sheet, bake at 375 for  14 minutes.

Keto Pizza Meatballs







     Pizza comes in many forms, and meatballs are one of them.  My Keto Pizza Meatballs are filled with savory goodness and perfect for a low carb lifestyle.  Each of the 16 are only 102 calories, 1.8g carbs, .4g fiber, 1.4g net carbs, 10.4g protein and 6g fat.  Serve with steamed Broccoli topped with melted Butter, if you need to add more fat in your meal.

Ingredients for 16 Meatballs with Sauce~
1 pound 92% ground Beef
2 jumbo Eggs
Dash Italian Seasoning, Salt, Pepper, Garlic Powder, Onion Powder
1/2 cup shredded Parmesan
1/4 cup chopped Onion
1.5oz Barbecue flavored Pork Rinds, crushed (sub with regular)
8oz can Tomato Sauce
6.5oz drained sliced Mushrooms
3/4 cup shredded Mozzarella
Parsley, for garnish, if desired

     Add Beef, Eggs, desired Seasoning, Parmesan, Onions, and 1oz of the crushed Pork Rinds to mixing bowl, blend well with hands til well incorporated.  Weigh out 16 Meatballs, each should be 1.5 ounces.  Dip the top of each Meatball in remaining crushed Pork Rinds.  Add Tomato Sauce and Mushrooms to Pam coated baking dish, top with Meatballs, bake at 400 for 30 minutes.  Remove and top with Mozzarella and Parsley.  Enjoy  :)


Breakfast Granola Keto Cookies









     The ketoers live for their Bullet Proof Coffee in the mornings, ...however, non coffee drinkers rise up and Cookie on!  My Breakfast Granola Keto Cookies are fighting for morning recognition.  Each of the jumbo mother loads are only 231 calories, 16g carbs, 6.1g fiber, 6.7g sugar alcohol, 3.2g net carbs, 6.5g protein and 19.4g fat.  See you when the sun comes up!  (PS. slather with two teaspoons nut butter if you are looking for a 300 calorie meal)
