Keto Pie Crust Cookies





     You know that combination of sweet and savory that hits all the right spots on your taste buds, and makes you happy you are alive!?  Whelp, this little diddy covers all those bases.  I am so happy how this turned out and couldn't wait to share.  For a full serving of two cookies, it is 305 calories, 11g carbs, 7g fiber, 4g net carbs, 6g protein and 29.5g fat.  You've heard of fat bombs, however this creation is the bomb on fat!  Cheers  ;)

Ingredients for two Cookies~
1/4 cup Almond Flour
1 Tablespoon chopped Butter
Dash Salt
1 Tablespoon Lily's Chocolate Chips, divided~ or squares of their Chocolate of your choice

     Add Flour, Butter and Salt to bowl, work dough with hands til smooth ball forms and well incorporated.  Break dough into four equal pieces and press into the bottom of four silpat cupcake liners, prick dough with fork.  Bake at 350 for 10 minutes, remove, divide Chocolate in half and place each half on two of the pieces of baked dough, return pan to oven for one more minute, remove and agitate pan til Chocolate covers dough.  CAREFULLY, remove the two pieces of baked dough without the Chocolate and lay each on top of the Chocolate layer, forming two sandwiches.  Place in freezer til set.  Enjoy  :)
