Coconut Pie Crust Medallions







     Time to go Coconuts!  All four Medallions are only 300 calories, 29g carbs, 17g fiber, 3.5g sugar alcohol, 8.5g net carbs, 7.5g net carbs, 25g fat.  Enjoy them all at once... or savor them slowly over time!  Decadence at it's finest!

Ingredients for four Medallions~
1/4 cup Pereg Coconut Flour
1 Tablespoon Butter
Dash Salt
1/4th of a 3oz Lily's Stevia Sweetened Coconut Dark Chocolate Bar (net weight of .75oz)~divided into four pieces
1 Tablespoon unsweetened shredded Coconut

     Add Flour, Butter and Salt to small bowl and work together with hands til fully incorporated, and divide equally among four silpat cupcake liners, bake at 350 for 10 minutes, add one piece of chocolate to each and return to oven for one more minute.  Agitate pan til melted chocolate covers crust, sprinkle evenly with Coconut shreds, chill in freezer til Chocolate is set.  Enjoy  :)
