Keto Pumpkin Zucchini Donuts







     Is this dessert, is this a snack, is this breakfast!?  How bout all three!?  And have I mentioned Keto friendly!?  Each of these 13 Donuts are only 156 calories, 16g carbs, 2.3g fiber, 11g sugar alcohol, 2.6g net carbs, 5.4g protein, and 13.4g fat.  And we haven't even mentioned all the wonderful flavor and nutrition just waiting to be consumed.  Put this on your to do list!

Ingredients for 13 Donuts~
4oz/1 cup shredded Zucchini
4 Tablespoons Butter, softened to room temperature
1/2 cup Lakanto Golden Monk Fruite~use code Paige20 for discount
2 jumbo Eggs
1/2 cup Pumpkin
1/4 cup Sour Cream
2 scoops unflavored Vital Protein Collagen Peptides
1/2 cup Pereg Almond Flour
1/2 cup Pereg Coconut Flour
1 teaspoon Baking Powder
Heavy Dash Ginger
Dash Cinnamon
Dash Vanilla

3 Tablespoons Butter, softened to room temperature
3oz/6 Tablespoons Cream Cheese, softened to room temperature

     Grate Zucchini into dish towel, squeeze towel to press out all of liquid, set aside.  From first set of ingredients, cream Butter and Monk Fruit til well blended, then incorporate Eggs, and continue to mix in remaining first set of ingredients. Drop batter by 1/4 cup onto Pam coated Donut pan, spread evenly and bake at 375 for 14 minutes.  Meanwhile, beat together second set of ingredients, chill til ready to frost, using scant Tablespoon per Donut.  Enjoy  :)
