Keto Nachos

     Now you can have your Nachos and eat them too.  A fellow Keto lover turned me on to Carolina Gold Nuggets Microwave Pork Rinds, and Nachos were a natural next step.(thanks @tasharenee013...what other hidden gems do you have up your sleeve).  #gamechanger  Each of these decadent naughty but nice servings are only 335 calories, 9.5g carbs, 2.5g fiber, 7g net carbs, 35g protein, and 14.5g fat.  For starters, hop on Amazon and order up your own stash of microwaveable Pork Rinds, these things are super fab, and ZERO carbs...the possibilities are endless!  :)

Ingredients for 8 servings~
2 pounds 96% lean Ground Beef
1/2 cup chopped Onion
1 Tablespoon chopped Garlic
Dash Cayenne
1 packet Old El Paso Taco Seasoning

1/2oz Carolina Gold Nuggets Pork Rinds, per serving
1 Tablespoon Sour Cream, per serving
2 Tablespoons Salsa, per serving
1oz sliced Avocado, per serving
2 Cherry Tomatoes, per serving

     Add ground Beef, Onion, Garlic, and Cayenne in skillet and cook til browned, drain fat, and stir in seasoning til fully coated.  Meanwhile, prepare 1/2oz Pork Rinds according to directions, add 1/8 of the meat, top with Sour Cream, Salsa, Avocado and Tomato per serving.  Enjoy  :)
