Keto Peanut Butter Cake

     What could be more decadent than a Peanut Butter Cake!?  To take it to the next level, this is a quick microwavable wonder.  Each of the four servings are 260 calories, 13g carbs, 2g fiber, 9g sugar alcohol, 2g net carbs, 12g protein and 23g fat.  Whether you are set to impress, or just hoarding dessert secretly in your bedroom (...asking for a friend), this one fits the bill.

Ingredients for four servings~
2 Tablespoons no sugar added Chunky Peanut Butter (sub with smooth)
1/4 cup Pereg Almond Four
1 jumbo Egg
2 Tablespoons Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount
1 scoop unflavored Vital Protein Collagen Peptides
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1 Tablespoon no sugar added Peanut Butter
1 Tablespoon Butter, softened to room temperature
1oz/2 Tablespoons Cream Cheese, softened to room temperature

1/4 cup Heavy Whipping Cream
1 Tablespoon finely chopped Peanuts, sub with other nut

     Mix first set of ingredient in Rubbermaid 2 cup tupperware container, coated with cooking spray.  Microwave for 1 minutes 15-30 seconds, less time for a more moist dense cake, or more time for a dryer cake.  Meanwhile, whip second set of ingredients til fully blended, chill and frost when cake is cooled.  Whip Heavy Whipping Cream til firm peaks form, add to top of frosted cake, garnish with nuts.  Enjoy :)
