Waffles for Lunch

     Isn't lunch such a struggle every day!?  What to eat, how many calories, sweet or savory!?  May I offer a suggestion...Waffles for Lunch!  It's a protein powerhouse that will launch you thru any afternoon.  Check out these macros, 261 calories, 4.7g net carbs and 50g protein...yes FIFTY!!!  Take that lunch, time to show noon whose boss!  :)

Ingredients for Waffles for Lunch~
1 scoop Quest Salted Caramel Protein Powder
1 scoop Quest Multi Purpose Protein Powder
7oz 2% Fage Greek Yogurt
1/3 cup Swerve Confectioners Erythritol
1/3 cup Egg Whites
1 jumbo Egg
1/4 cup Bobs Red Mill Almond Flour
1 Tablespoon Betterbody Foods Extra Virgin Coconut Oil, melted
1 teaspoon Baking Powder
Dash Cinnamon
Dash Betterbody Foods Vanilla

1 slice Turkey Lunch Meat per Waffle (approx 3/8oz)
1 slice Fat Free American Cheese per Waffle
1 jumbo Egg per Waffle
Diced Green Onion as garnish
Dash Pepper

     Mix together all ingredients in first set of ingredients, heat Waffle Iron, spray with non stick spray and drop batter by 1/3 cup on hot iron and cook to desired level of done.  Should yield 6 Waffles.  Top each Waffle with a slice of Turkey, a slice of Cheese and cooked Egg, garnish Egg with Green Onions.  (Cook Egg according to desire, I add my Egg to a Pam coated skillet and top with lid to help steam top while bottom bakes.)  Finish with dash Pepper.  Repeat for as many Waffles as needed.  Enjoy  :)
