Savory Meatloaf










     I don't love Meatloaf, but my husband LOVES Meatloaf, and I love my husband...you see where this is going right...!?  That being said, this recipe has changed my mind...not about my husband, but #theloaf!  I came across a recipe from Cafe Delites and took my inspiration from her.  I have actually never tasted anything quite like this.  It was savory, juicy, flavorful, and I couldn't wait to make leftover Meatloaf sandwiches with a hearty piece of bread lathered in chipotle mayo the next day...and the day after.  Each of the 12 slices are only 241 calories, 16g carbs, 2.3g fiber, 13.8g net carbs, 20g protein, and 10.5g fat. This is not my typical dinner fare, but it is all about portion control and balance. Follow those rules and all things are possible...even Meatloaf sandwiches!

Ingredients for 12 slices~
1 Tablespoon Olive Oil
1 medium white Onion, diced
2 Tablespoons chopped Garlic
Dash Cayenne Pepper, to taste
4 slices Dave's Killer Bread (sub with favorite)
1/2 cup 2% Milk
2 pounds 92% Laura's Lean Ground Beef
1 cup shredded Parmesan Cheese
1 jumbo Egg
1/4 cup Egg Whites
1/2 cup fresh chopped Parsley
3 Tablespoons Tomato Paste
2 Tablespoons Worchestershire
1 Tablespoon Spicy Brown Mustard
Dash Salt to taste
Dash Pepper to taste

3/4 cup Ketchup
2 Tablespoons Tomato Paste
2 Tablespoons Brown Sugar
4 Tablespoon Cider Vinegar
1 teaspoon Worchestershire

Additional chopped Parsley, for garnish if desired

     Add Olive Oil to skillet, add Onions, Garlic and Cayenne til golden brown, this is a slow process and may take 30 minutes for that golden perfection.  Meanwhile add Bread and Milk to large mixing bowl, when soaked tear apart into small pieces, then add remainder of first set of ingredients, plus the onions when done.  Mix with hands til thoroughly blended.  Turn out on a parchment and foil lined cookie sheet, mold into loaf shape.  Mix second set of ingredients, pour half on top of loaf, bake at 400 for one hour, remove, pour balance of sauce on top, return to oven and bake another 15 minutes.  Remove, rest 10 minutes, slice and serve.  Garnish with extra Parsley if desired.  Enjoy  :)  PS  don't forget to make sandwiches tomorrow!
