Single Serving Fudge Cake








     Sometimes you just want that single serving without the temptation of the whole pan... or so I've heard...!  Don't you feel that way!? ...asking for a friend...  I think I actually discovered utopia in my kitchen today with this humdinger.  So rich and satisfying, and so many options.  Macros for the full meal deal is 299 calories, 36.1g carbs, 23.5g fiber, 12.6g net carbs, 22.1g protein and 18.5g fat.  You can remove the Frosting and subtract 41 calories, 5g carbs, 5g fiber, 2.5g protein and 5g fat.  You can also sub Frosting for a Tablespoon Chocolate Chips for 303 calories, 39.3g carbs, 24.8g fiber, 14.5g net carbs, 20.5g protein and 17.5g fat.  Choices, choices, choices...it makes the world go round!  And before you send me hate mail about all the work for this Single Serving Fudge Cake, save your breath, my suggestion is to make a weeks worth at a time and store them in the fridge or freezer.  Work smarter not harder!  #winning

Ingredients for one Single Serving Fudge Cake~
1/4 cup super fine Almond Flour
2 Tablespoons unsweetened Applesauce
1 scoop Vital Proteins unflavored Collagen Peptides
1 Tablespoon unsweetened Hershey's Cocoa
1 Tablespoon ground Flax Seed
1 Tablespoon Lakanto Monk Fruit~use code Paige20 at checkout
1/4 teaspoon Baking Powder
Dash Lite Salt
Dash Cinnamon
Dash Vanilla
6 Lily's Stevia Sweetened Dark Chocolate Chips

2 Tablespoons Butter, softened to room temperature
2oz Cream Cheese, softened to room temperature
2 scoops Vital Proteins unflavored Collagen Peptides
1/4 cup Lakanto Confectioners Monk Fruit~use code Paige20 at checkout
Dash Butter Extract
Dash Vanilla Extract

     Mix first set of ingredient minus the chips in cooking spray coated bowl or mug, microwave for one minute.  Sprinkle with Chips.  Meanwhile, mix Frosting ingredients with beater til fluffy and top with one Tablespoon Frosting (will yield 10 Tablespoon, refrigerate leftovers).  As mentioned previously, you can leave the Frosting off and replace with 1 Tablespoon Chocolate Chips if you prefer, or not top it at all.  This makes a dense rich fudgy cake, if you want it drier/cakier, then microwave another 30 seconds til desired results.  Enjoy :)
