Pan Charred Asparagus


     I'm really diggin' on pan charring !!!  What a fun way to make delicious veggies !!!  And Asparagus is no exception !!!  This made a perfect pairing with grill salmon and baby bell peppers !!!  Try it the next time you are in the mood for some long green sticks, you wont be sorry !!!  (This serves four and has 52 calories and 4g fat).   ;)

Ingredients~
8oz asparagus, trimmed
Pam spray, I use the EVOO Pam
1/2 teaspoon EVOO
1 teaspoon butter
2 teaspoons lemon juice
2 teaspoons dried Tarragon
Dash of Light Salt
1 Tablespoon chopped walnuts, toasted if desired
2 Tablespoons shaved Parmesan

     Heat skillet ( not nonstick) over high heat for 2 minutes.  Coat pan with Pam and add asparagus immediately in a single layer without stirring for 2 minutes or until lightly charred.  Cook 5 more minutes til crisp tender and evenly charred, tossing occasionally.  Remove pan from heat, and let rest for 1 minute.  Add EVOO and butter, toss to coat.  Add lemon juice, toss.  Add tarragon and salt, toss.  Top with Parmesan and walnuts.  Enjoy  ;)
