Vegitarian Spaghetti and Meatballs ~ Mamma Mia ;)

     Everyone once in a while I think its a good idea to go meatless !!!  There are so many new meatless options out there that its impossible not to find something that is tempting to try !!!  You can find chicken, beef, sausage or Meatballs !!!  The pasta sauce and noodles are vegan and gluten free as well.  The Meatballs have wheat protein, so are vegan but not gluten free. Add a little shaved parmesan on top and you will feel like you are dining in Italy !!!  ;)

Ingredients for Sauce~
1 Yellow Onion, diced
1 heaping teaspoon chopped jarred garlic
Dash of Cayenne ( not pictured in ingredients picture)
1 Tablespoon EVOO
1 cup shredded carrots
1-28oz can Woodstock Organic Crushed Tomatoes with Basil
1 teaspoon oregano
1 Tablespoon Organic Coconut Sugar, or regular sugar if organic is not necessary
Dash salt
Dash pepper
Veggie Patch Meatless Meatballs ~ 9 oz ( I find this in the organic frozen section of Dillons)
Organic Black Bean Spaghetti ( boiled in 8 cups of water for 7 minutes and drained~ I find this at Green Acres)
4 Tablespoons shredded Parmesan

      Saute' onion, garlic, oregano, pepper and cayenne with EVOO in heated skillet til golden brown.  Then add shredded carrots til softened. Stir in tomatoes, salt and sugar and simmer over low for 20-25 minutes.  Stir in Meatballs the last 5 minutes to heat thru and server over Black Bean Spaghetti and top with 1 Tablespoon shredded Parmesan.  This recipes serves four~ each serving is 500 calories, 25 gms carbs, and 42 gms protein.  Enjoy~ Caio  ;)
