Shrimp Cauliflower Fried Rice















     If you haven't heard me mention Gina from Skinny Taste, you should really check out her Blog!  I got my inspiration from her for this and everyone in my family just loved it !!!  It's a great option for lower calorie lower fat version of real fried rice.  Check this out and if you like it, you can look up my Chicken Cauliflower Fried Rice recipe as well.  :)

Ingredients~
1 head cauliflower, pulsed in food processor to rice like crumbles ( don't over process or it will get wet)
1 Tablespoon Sesame Oil
1 large egg
1/3 cup egg whites
dash of salt
Large Yellow Onion, diced
1 Tablespoon chopped jarred garlic
1 1/2 cup frozen peas and carrots, thawed
5 green onions diced, green and white parts separated
3 Tablespoons Soy Sauce

     Mix egg and egg whites in bowl, set aside. Heat Sesame Oil in large skillet, add yellow onions, white onion part of green onions, dash of salt, and garlic til golden brown.  Add peas and carrots til cooked thru. Add soy sauce and  "riced" cauliflower til cooked and crispy.  Add shrimp and cook til pink, then add egg mixture til cooked thoroughly.  Top with green onions!  Enjoy ;)
