Zucchini Chocolate Chips







     Let's call it what it is...perfection in every bite...I call 'em as I see 'em!  My Zucchini Chocolate Chips are great for school lunches, a quick healthy breakfast, or that afternoon treat that calls our name.  Luckily, this fits the bill nicely for all of the above.  At only 39 calories, 6g carbs, 1g fiber, 3g sugar alcohol, 2g net carbs, 1.5g protein and 2.6g fat, I have 10 post work out and call it a day!  ...gives me sumthin' to look forward to! ...I think they call that the dangling carrot...pun intended...

Ingredients for 45 Cookies~
1 small (4oz) Zucchini, trimmed
1 cup Oats
1 medium (4oz) Banana, smashed
4 Tablespoons Butter, softened
1/2 cup Lakanto Monk Fruit (use code Paige20 at checkout for discount)
2 Extra Large Eggs, room temperature
2 scoops unflavored Vital Proteins Collagen Peptides
1/4 cup super fine Almond Flour
1/4 cup ground Flax Seed
1 teaspoon Lite Salt
1 teaspoon Baking Powder
Dash Vanilla
Dash Cinnamon
1/2 cup Lily's Stevia Sweetened Dark Chocolate Chips

     Grate Zucchini into dish cloth, squeeze out excess liquid, set aside.  Add 1/2 cups Oats to Magic Bullet or Blender and grind to powder, set aside.  Add Butter and Sweetener to mixing bowl and blend with mixer til fully incorporated, then whip in Eggs.  Continue to add in rest of ingredients til well mixed, except for Chips, stir those in by hand for final step.  Chill dough for 1.5 hours, remove and drop by level Tablespoon on Silpat lined cookie sheet.  Bake at 375 for 12 minutes.  Enjoy  :)
