Blueberry Muffins






     Far be it from me to toot my own horn...BUT...TOOT TOOT!!!  These Blueberry Muffins are beyond good and at 114 calories, 4.3g net carbs and 10.2g protein they are more than just bragging rights!  It is so easy to be healthy with creations like this keeping me on track.  I hope you will give these a try and see how fun and good for you Blueberry Muffins can be.  :)

Ingredients for 6 Muffins~
1 Tablespoon Vanilla Cupcake Sweet Spreads, melted
1 jumbo Egg
1 scoop Quest Vanilla Milkshake Protein Powder
1/2 cup 25 cal/cup Cashew Milk
1/4 cup Nutiva Coconut Flour
1/4 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
1/2 teaspoon Salt or Lite Salt
Dash Cinnamon
Dash Vanilla
1 Mixed Berry Quest Protein Bar, chopped into small pieces
1/2 cup Blueberries

     Stir everything together thoroughly, except for last 2 ingredients.  Fold in diced Quest Bar and Blueberries, but reserve 24 Blueberries.  Fill 6 lined cupcake tins equally with batter and top each Muffin with 4 Blueberries, pressing down gently.  Bake at 350 for 20 minutes.  Remove and Enjoy  :)
