Chicken Zoodles with Garbanzo Bean Sauce
Oh Zoodles, how do I love thee, let me count thy ways!!! If you want a healthy fun dinner, then it's time to go Zoodle cray cray! For those that haven't heard, pick up a cheap spiralizer and spin those Zucchini into long curly strands and top to your hearts delight! Today my heart was begging for Chicken and Garbanzo Beans! To further enhance your smile, each of these six servings is only 281 calories, 23.6g net carbs and 26.7g protein. BTW, listen to this hot tip, what you don't eat for dinner makes a perfect lunch tomorrow! ;)
Ingredients for 6 servings~
2 Tablespoon Extra Virgin Olive Oil, divided
1 medium Sweet Onion, diced
1 Tablespoon chopped jarred or fresh Garlic
Dash Cayenne Pepper
2~ 15oz cans drained Garbanzo Beans, divided
3 Tablespoons Lemon Juice
3 small Zucchini
1 pound boneless skinless Chicken Tenders
1 medium Red Bell Pepper, diced
5 slices Turkey Bacon, cooked and crumbled
7 Green Onion, cleaned and diced
Roma Tomato, diced and drained on paper towel to remove extra moisture
Dash Pepper
Heat 1 Tablespoon EVOO in skillet and add diced Onion, Garlic and Cayenne til golden brown. While browning, add one can drained Garbanzo Bean, other Tablespoon EVOO, and Lemon Juice to Magic Bullet or Blender and whip til well incorporated, doesn't have to be completely smooth and will be somewhat thick, set aside. Next add Chicken to browned Onions, heat til cooked thru and break up Chicken into bite size pieces with spatula. Add diced Red Bell Pepper til crisp tender, then add other can of Garbanzo Beans along with Garbanzo Bean Sauce til heated thru. While heating, trim Zucchini and sprialize into long thin noodles. Add Zoodles to large pasta bowl, top with Chicken mixture, then add cooked and crumbled Turkey Bacon, followed by diced Green Onion, finish with diced Roma Tomato and dash Pepper. Divide into 6 portions and serve. Enjoy :)
