Healthy Pecan Pie








     How would you like a little healthy guilt free high protein low carb Pecan Pie!? ... that's what I thought... me too!  Let me introduce my Healthy Pecan Pie, each of the 8 pieces are only 256 calories, 2.5g net carbs and 12g protein.  Pretty sure this will be adorning my Holiday spread!  With stats like these, Pecan Pie may be back on my approval list.  It's always been my favorite pie, but for years it's been a "No-No", but now it will be a "Yes-Yes Please".  Bring it Holidays, ...I ain't scurred of you!  ;)

Ingredients for 8 slices~
2 Quest Cinnamon Roll Protein Bars
2 Extra Large Eggs, beaten
1/3 cup melted Coconut Oil or Nut Butter
1/2 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount
Dash Cinnamon
Dash Vanilla
Dash Salt
1 and 1/3 cup Pecan Halves
Whipped Topping as garnish, if desired

     Microwave unwrapped Quest Bars for 15-20 seconds and pat into Pam sprayed 9 inch pie plate, making sure to cover the bottom and about 1 centimeter up the sides, set aside.  Stir together beaten eggs, Coconut Oil, Monk Fruit, Cinnamon, Vanilla, Salt and Pecans.  Bake at 350 for 25-30 minutes.  Enjoy  :)
