Sweet Potato Pad Thai




 
     I just love experiencing unique flavor combinations.  My Sweet Potato Pad Thai was a fun experiment pairing ingredients that aren't familiar on a a routine basis.  These portions are HUGE and will leave you full for hours, each of these 4 servings are 465 calories, 32g net carbs and 49g protein.  If you find the portions more than necessary, feel free to make this a 6 serving meal.  Regardless, just make sure to try this soon, and enjoy the smile spreading across your face with each and every bite!



Ingredients for 4 large or 6 medium servings~
1 Tablespoon Avocado Oil (sub with Olive Oil)
1 Tablespoon Sesame Oil
1 medium Onion, diced
1 Tablespoon chopped Garlic
Dash Canyenne
1 pound diced fresh Broccoli
1 pound spiralized (or diced/sliced if you don't have access to spiralizer) Sweet Potato
1.5 pounds diced Chicken Breast
1 inch fresh Ginger, finely diced

1/4 cup Peanut Butter Powder
2 Tablespoons Lite Soy Sauce
2 Tablespoons Sugar Free Maple Syrup
1 Lime, cut in half, juice sqeezed

1/4 cup Cashews (sub with Peanuts)
2 Green Onions, sliced
Cilantro for garnish, to taste
Lite Salt, to taste

     Heat Oils in skillet, add Onion, Garlic and Cayenne til lightly golden.  Add Broccoli til crisp tender, then add Sweet Potato, Chicken and Ginger til Chicken cooked thru and Potatoes softened.  Meanwhile mix second set of ingredients and add to skillet.  When ready to serve, top with Nuts, Onions and Cilantro.  Enjoy  :)
