Keto Pound Cake







     So,...I'm dragging my hubby along with me on this Keto journey.  And, in his quest to remain sane without the donut, he turned to the ever reliable Pinterest to sooth his aching sweet tooth.  Alas, he stumbled upon Hey Keto Mama (heyketomama.com) and found her Keto Vanilla Pound Cake calling his name.  And here is what it said, each of the 12 servings are 249 calories, 23g carbs, 2g fiber, 16g sugar alcohols, 5g net carbs, 7.7g protein and 20.7g fat.  Add your favorite low carb topping and enjoy perfection in every bite.

Ingredients for 12 equal servings~
1/2 cup Butter, softened to room temperature
2oz Cream Cheese, softened to room temperature
1 cup Lakanto Classic Monk Fruit~use code Paige20 for discount at checkout
2 large Eggs
1 cup Sour Cream
1 teaspoon Vanilla
2 cups Almond Flour
1 teaspoon Baking Powder

     Add Butter and Cream Cheese to mixing bowl and beat til well incorporated, continue to beat in each ingredient in order til fully combined.  Coat bundt pan with cooking spray and pour in batter, bake at 350 for 50 minutes, test for doneness.  For best results, let cake cool completely for at least 2 hours, preferably overnight.  If you remove too soon, it may crumble a bit.  Enjoy  :)
