Keto Egg Casserole








     Don't let the look of breakfast fool you!  This is all that and more!  This fits the bill for a mid morning or afternoon snack, even dinner would be sublime with a little Avocado and Salsa.  Each of these 12 pieces are only 214 calories, 4g carbs, .9g fiber, 3.1g net carbs, 19.5g protein and 13g fat.  And, if you are wanting to feed a crowd, this is a perfect option,...even better if the crowd is me, myself and I...  ;)

Ingredients for 12 servings~
12 jumbo Eggs
2 cups shredded Mozzarella, sub with other favorite
2 cups 4% Cottage Cheese, rinsed and drained in strainer
4oz can diced Green Chiles
2.25oz can sliced Black Olives
2~6.5oz cans sliced Mushrooms
4 diced Green Onions
1 diced Red Bell Pepper
Salt, to taste
Pepper, to taste

1/2 cup shredded Sharp Cheddar Cheese
Parsley, as garnish if desired

     Add Eggs to large mixing bowl, blend well with Beaters, add in remaining first set of ingredients and pour in parchment lined 9X13, bake at 375 for 40 minutes.  Remove, sprinkle with Sharp Cheddar and Parsley.  Enjoy  :)
