Baked Sweet Potato Hash
If you want to experience floating to heaven while leaving your body, take a bite of this Baked Sweet Potato Hash for breakfast, lunch or dinner! Then come back down to earth, finish this divine dish, and lick your plate clean! Fill your soul with joy guilt free since this is only 216.5 calories, 17.5g net carbs, and 11.8g protein. Ingredients~
1/2 teaspoon Nutiva Coconut Oil
3.5oz baked, chilled, skinless, diced Sweet Potato
1 Tablespoon chopped Onion
Dash Chili Powder
1/4 teaspoon chopped jarred Garlic
1 slice Turkey Bacon
1 Jumbo Egg
Pepper to Season
Heat Coconut Oil in skillet, add diced Sweet Potato, Onion, Chili Powder and Garlic til cooked on all sides. Meanwhile, microwave Turkey Bacon for one minute, set aside to cool and crumble. Remove Sweet Potato from skillet, set aside. Spray skillet with Pam, add Egg to skillet and heat til done, add lid to steam thru. Add cooked Sweet Potato to dish, top with fried Egg, sprinkle with Pepper and top with crumbled Bacon. Enjoy ;)

Raspberry Lemonade Cheesecake
I prefer to have my Lemonade in a Cheesecake, not from a kid manned stand in the front yard! Even so, Lemonade holds a special place in my heart sending me straight back to my youth. The handmade cardboard sign in the front yard reading, 15, 25 or 35 cents leaning against our card table topped with Kool-aid pitcher and 3 size of glasses. We would sit out there all day and be lucky to clear a dollar, but we didn't care, it was great fun (not to mention we drank all the profits)! :0 Do you remember pouring a full CUP of sugar into that Kool-aid pitcher when you were a kid!? Man that stuff was good, and now I understand why ... we were drinking SYRUP!!! HA All good things must end, ... or at least be modified. I hope you will take a minute and think about your youth as you sink your teeth into this memory filled healthy dessert. The best part is for an 8th of the Cheesecake it is only 181 calories, 10g net carbs and 16g protein (this does not cover the Raspberries or Cool Whip garnish). Maybe being an adult is not so bad after all ;)
Ingredients for 8 pieces~
3~6oz Lemon Quark Yogurt
Juice of Small Lemon
1/3 cup Swerve Granular Erythritol
8oz Fat Free Cream Cheese, room temperature
1/4 cup Vanilla Cupcake Sweet Spreads Coconutter
2 Jumbo Eggs
1/4 cup Nutiva Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
Dash Vanilla
Dash Cinnamon
Raspberries for garnish
Spray Cool Whip, for garnish
Lemon Rind Curls, for garnish
Mix all ingredients with beaters til smooth (except for Raspberries, Cool Whip and Lemon Rind Curls). Pour into Pam sprayed 9" Springform pan and bake at 325 for 35 minutes. Remove, sprinkle with Lemon Rind Curls, cool and serve with Raspberries and Cool Whip. Enjoy ;)

You will never look at fudge the same way again!!! Hemp Brownies
Before anyone gets too excited about my Hemp Brownies I need to shed a little light on the subject. Although the two plants are related, hemp products contain only trace levels of TCH(less than 10ppm) and will not cause a psychoactive effect...sorry dude. :/ However, that being said, the protein powder does have a "grassy" (no pun intended) flavor that is best masked by chocolate. Hemp is rich in omega 3 and fiber and perfect for anyone looking for a plant based protein. This recipe makes 16 servings, each has 180 calories, 15g net carbs and 6g protein. Sweet Cinnamon Roll Bread

Ingredients~
1 Quest Cinnamon Roll Bar
1/4 cup Sweet Spreads Cinnamon Roll Coconutter, melted, plus 1 Tablespoon for topping
1 small Banana, mashed ( about 2.5oz)
4oz baked, cooled, skinned Sweet Potato, mashed
2 Jumbo Eggs
Dannon Greek Light&Fit Vanilla Yogurt
2/3 cup Swerve Granular Erythritol
1/4 cup Nutiva Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 teaspoon Baking Powder
Heavy Dash Cinnamon
Dash Vanilla

Microwave Cinnamon Roll Quest Bar for 12 seconds, and pat into thin rectangle on Silpat lined cookie sheet, bake at 350 for 5 minutes, cool and crumble into Magic Bullet, grind to powder. One Pot Walnut Wild Rice with Brussels and Chicken
I don't care what you say, but when you can cook dinner in one pot life gets a whole lot sweeter. Welcome to my One Pot Walnut Wild Rice with Brussels and Chicken. This is actually one of the best rice dishes I have ever eaten, and I have two family members to back up my claim! I REALLY hope you will give this a whirl. For an 8th of the recipe, which constitutes 1/2 cup rice mixture and 4oz Chicken, it is 306 calories, 25.8g net carbs and 22.9g protein. Can't wait to hear what you think when you try it ;)
Ingredients for 8~
1/4 cup chopped Walnuts
1 Tablespoon EVOO
Medium Yellow Onion, diced
Tablespoon chopped jarred Garlic
Dash Cayenne Pepper
Dash Salt
2 pounds boneless skinless Chicken Thighs
1 cup Wild Rice
1 cup shredded Carrots
1 bunch of diced Celery
2 cups Water
2 teaspoons Chicken Base or 2 cubes Chicken Bouillon
1 pound Brussels Sprouts, cleaned and cut in half
1oz Chopped Dried Dates
Add Walnuts to skillet and heat for 4-5 minutes til beginning to toast, making sure not to burn. Keep an eye on nuts as they can burn quickly, remove and set aside. Add EVOO to skillet along with Onion, Garlic, Cayenne, and Salt til golden brown. Then add Chicken and brown on all sides 3-4 minutes each, remove,plate, and set in fridge til ready for use. Meanwhile, add Rice, Carrots, and Celery to pan and swirl around til completely coated with Onion mixture. Add Water and Chicken Base/Bouillon bringing to boil, cover and reduce heat to simmer for 45 minutes. Then add Chicken back to pan along with Brussels, cover and simmer another 15 minutes, or til Chicken done and Brussels softened. Top with Walnuts and Dates. Enjoy ;)

Sweet Nanner Nutter Crockpot Cake
Who of you has EVER cooked a cake in a crockpot!? Not me, ... til today!!! It turned out great and was so easy, also it's fun to do something a little creative and out of the
Ingredients~
3oz Banana
5.5oz baked, cooled, and peeled Sweet Potato
3 Extra Large Eggs
1/2 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout
1/3 cup Peanut Butter
1 scoop Vanilla or Peanut Butter Quest Protein Powder
1/2 cup Coconut Flour
1/2 cup 25 cal/cup Cashew Milk + 1 teaspoon Vinegar = Cashew Buttermilk
5.3oz Dannon Light&Fit Greek Vanilla Yogurt
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla Extract

1 Tablespoons Lily's Stevia Sweetened Dark Chocolate Chips
1 Tablespoon Lakanto Monk Fruit Chocolate Syrup (use code Paige20 for discount at checkout), per slice

1/4 cup Vanilla Halo Top Ice Cream, per slice
Add all the batter ingredients in first section to bowl and beat with mixer til smooth. Pour batter into Pam sprayed Parchment lined crockpot for four hours on low, or til center is set. Cool and lift cake by grasping sides of Parchment Paper ( don't forget to spray Parchment Paper with Pam). While cooling, mix Chocolate Chips and Chocolate Syrup and microwave for 15 seconds, stir and let cool and thicken. When ready to serve, slice an eighth cake, drizzle with Chocolate Sauce and top with 1/4 cup Vanilla Halo Top Ice Cream. Enjoy :)
