Chocolate Chip Pumpkin French Toast








     Does anyone have the misconception that Pumpkin is strictly a Fall flavor!?  If so, I think that should be considered a "food crime".  I have been playing in the kitchen this past week with a few fun Pumpkin creations and my Chocolate Chip Pumpkin French Toast is not to be missed.  It makes my mouth water just thinking about it, the entire delicious serving is only 283 calories, 10g net carbs and 42g protein.  Try this tall stack out for a hearty breakfast or satisfying snack as soon as possible.  :)

Ingredients for one serving~
1/3 cup Egg Whites
1/4 cup Pumpkin Puree'
1/2 scoop Quest Vanilla Protein Powder
3 slices Thin Slim Foods Honey Bread (sub with a low carb bread)
No Calorie Butter Spray
1 Tablespoon Lakanto Monk Fruit Syrup~use code Paige20 at checkout for discount
2 Tablespoons Reddi-Wip
10 Lily's Stevia Sweetened Dark Chocolate Chips

     Stir together Egg Whites, Pumpkin and Protein Powder~ Dip each slice of bread in batter, coating evenly on each side.  Fry French Toast in Pam coated skillet and spray each piece with spray Butter and stack.  Drizzle Syrup over French Toast and top with Reddi-Wip and Chocolate Chips.  Enjoy  :)

Agave Lemon Chicken and Asparagus








     Agave Lemon Chicken and Asparagus is not only delicious but can be cooked all in one pan, ...let's take a moment of silence to worship the clean up Gods...if you think I'm kidding I'm not...  (And if you are a really desperate person, why not just eat directly out of the pan, just sayin')  This can be considered 4 large portions or 6 small portions for 360 calories,  20g net carbs and 31g protein.  Either way, just make sure you take the time to make and enjoy this sweet and savory dish of goodness!  :)

Ingredients for 4-6 servings~
1.5 pounds boneless skinless Chicken Breasts
1/3 cup Flour
3 small Lemons
4 Tablespoons melted Butter
1 Tablespoon chopped Garlic
1/3 cup Panko Crumbs
1/2 cup shredded Parmesan
1 teaspoon dried Parsley
Dash Garlic Powder
Dash Onion Powder
Dash Salt
Dash Pepper
3 Tablespoons Betterbody Foods Agave
1 Tablespoon Nutiva Butter Coconut Oil, melted
1 pound trimmed Asparagus

     Slice Chicken Breast into strips to form tenderloins, set aside.  Get out 3 bowls and add Flour to first bowl.  For second bowl, grate 1-2 teaspoons Lemon Zest and squeeze juice from 1.5 Lemons (approx 4-5 Tablespoons), melted Butter, and chopped Garlic, stirring well to incorporate.  In third bowl, add Panko, Parmesan, Parsley, Garlic Powder, Onion Powder, Salt and Pepper, stir to incorporate.  Dip tenders in first bowl, second bowl and then third bowl and lay onto parchment lined sheet pan and bake at 425 for 10 minutes.  Meanwhile, stir together juice of 1/2 small Lemon, Agave, and Coconut Oil~ remove Chicken, flip all pieces, add Asparagus Spears to pan, slice last lemon and scatter on top of Chicken.  Drizzle Chicken and Asparagus with  Agave mixture and bake 20 more minutes.  Enjoy  :)

Double Chocolate Chunks with Cream Cheese








     If you happen to be looking for a dessert and can't decide what will cure that aching sweet tooth, I am here to help you out.  Satisfying soft smiles will abound when you discover all this can be yours for only 275 calories, 7.7g net carbs and 24.7g protein.  Or if you are feeling generous, divide into 6 triangles and share with friends...fyi, the names of my friends are me, myself and I ... Double Chocolate Chunks with Cream Cheese will do that to ya!  ;)

Ingredients for 1 or 6 servings,... you decide~
1 Quest Double Chocolate Chunk Protein Bar, sub with favorite flavor
2 Tablespoons/1oz  Cream Cheese, softened to room temperature
1 Tablespoon Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount
1 teaspoon Lily's Stevia Sweetened Dark Chocolate Chips
1 teaspoon Blue Diamond 30 cal/cup Almond Milk
1 teaspoons chopped Walnuts

     Microwave unwrapped Protein Bar for 15 seconds and pat into circle on Silpat lined cookie sheet, bake at 350 for 3 minutes.  Meanwhile, stir together Cream Cheese and Confectioners til smooth and spread on cooled Chocolate.  Melt Chocolate Chips and Almond Milk in bowl in microwave for 20 seconds, stir together til well blended, add to baggie, snip the corner and drizzle over Cream Cheese mixture.  Sprinkle with Walnuts and serve whole or in cut triangles.  Enjoy  ;)

Cinnamon Fruit Pizza







     Do you know how many styles of Pizza there are in the universe!?  That's like asking how many stars are there in the Galaxy!?  Some are savory some are sweet and some are jjuussstttt right!  Let me introduce you to my Cinnamon Fruit Pizza.  This adorable sphere is only 250 calories, 15g net carbs and 29g protein, not including fruit garnish.  With stats like these, it's time for a Pizza Party!  :)

Ingredients for one Pizza~
1 Quest Cinnamon Roll Protein Bar
5.3oz Dannon Greek Light & Fit French Vanilla Mousse Yogurt
Fruit Garnish as desired to taste ( not included in macros)

     Unwrap Protein Bar and microwave for 15 seconds, pat into circle and bake on Silpat lined cookie sheet at 350 for 3 minutes.  When cooled, spread with Mousse Yogurt and top as desired with fruit of choice.  Enjoy  :)

Brownie Cannoli







      Everyone loves this Italian pastry dessert from Sicily, but the Brownie Cannoli is my answer to this tubular favorite.  As long as we can enjoy a sweet creamy filling, no one really cares about anything else,... am I right!?  But these macros are sure to get your attention at 248 calories, 7.6g net carbs, and 24.3g protein.  This may be looked upon as a summer treat, but with stats like these, this may quickly become a year round staple.  :)

Ingredients for one serving~
1 Quest Brownie Protein Bar
2 Tablespoons Kroger Greek Yogurt Cream Cheese
1 Tablespoon Swerve Confectioners Erythritol
1 teaspoon Lily's Stevia Sweetened Dark Chocolate Chips
1 teaspoon Blue Diamond 30 cal/cup Almond Milk
Sprinkles as garnish, optional (not included in Macros)
Reddi Wip Whipped Topping as garnish, optional (not included in Macros)

     Unwrap Quest Bar and microwave for 15 seconds, pat into rectangle and lay on Silpat lined cookie sheet.  Meanwhile mix together Cream Cheese and Confectioners til smooth and spread on the Brownie rectangle, roll up like a pinwheel lengthwise so that sides are slightly overlapping.  Place seam side down on Silpat, bake at 350 for 3 minutes.  While baking, add Chocolate Chips and Almond Milk to bowl and microwave for 20 seconds, stir til smooth and spread on baked Cannoli and top with Sprinkles and Whipped Topping as garnish if desired.  Enjoy  :)

Patriotic Cream Cake








     If you want to enjoy a rich decadent sugar free low carb dessert, I have something for you to celebrate this Holiday!  Believe me when I tell you that you won't be missing out on any of the festivities, in fact this dreamy dish will be the central focus of the party.  Be prepared to start passing out the recipe for this Patriotic Cream Cake, all Flag loving citizens won't know whether to eat it or recite the Pledge of Allegiance.  Each of the 8 slices are only 357 calories, 7g net carbs and 3g protein.  The only hard part about eating this Cake is that your right hand will be over your heart with patriotism with every faithful bite.  So this is a double treat for all "lefties" out there!  Happy Fourth of July everyone  :)

Ingredients for 8 slices~
1 cup Pecans
1/4 cup Almond Flour
2 Tablespoons Coconut Flour
2 Tablespoons Agave (sub with Honey or increase Monk Fruit)
2 Tablespoons Lakanto Monk Fruit
Dash Cinnamon
16oz Heavy Whipping Cream
1/2 cup Lakanto Confectioners Monk Fruit
Dash Vanilla
Approximately 10 medium-large Strawberries, sliced in half
Approximately 1/4-1/3 cup Blueberries

     Add Pecans to food processor and grind til chunky, careful not to over process as it will turn into pecan butter, should only take a few seconds.  Add Almond Flour, Coconut Flour, Agave, Granular Monk Fruit, and Cinnamon, continue to process til fully blended and well incorporated.  Line a Springform pan with Parchment Paper and press nut mixture in bottom and chill while working on rest of Cake.  Meanwhile, add Whipping Cream, Confectioners Monk Fruit, dash of Cinnamon and Vanilla to large mixing bowl and beat til stiff peaks form, may take 10 minutes.  Pour into Springform Pan and decorate top with fruit in Flag shape.  Set in freezer for 30 minutes to set.  Remove and serve.  Enjoy  :)

   

Lemon Tarragon Swordfish








     Ok Peeps, listen up!!!  You simply MUST try my Lemon Tarragon Swordfish!!!  This is one of the best things I have EVER eaten!!!  It literally melted in my mouth, ... and I think I know why!  I have a simple secret I'm willing to share (and it has nothing to do with Butter even though it tastes like it does), BRIANNAS Lemon Tarragon + Swordfish = LOVE LOVE LOVE!!!  Head over to Whole Foods and put all your mathematical ingredients in your shopping cart for a perfectly balanced equation!  Then prepare to label this an A+  dinner because for every 6oz serving it is only 206 calories, ZERO carbs and 33.6g protein!!! (PS  BRIANNAS Lemon Tarragon is only 35 calories per 2 Tablespoons, this is definitely my new #1 fave for flavor and STATS!!!)  Fish on hommies  ;)

Ingredients for 4 ~ 6oz servings~
1 1/2 pounds fresh Harpooned Swordfish (net caught is a fine substitute)
2/3 cup BRIANNAS Lemon Tarragon

     Add BRIANNAS Lemon Tarragon and Swordfish to gallon ziplock baggie and marinate for 6-8 hours.  Remove Swordfish and discard marinade, grill to perfection!  I served this with fresh steamed Broccoli and roasted Golden Beets.  Drizzle Swordfish with extra BRIANNAS Lemon Tarragon as a garnish if desired.  Enjoy  ;)
