Carrot Cake Truffles







     I think I have entered a whole need dimension with these amazing wonders.  These Carrot filled spheres of deliciousness will fill your mouth with smiles.  Each of the 11 are only 105 calories, 8.4g carbs, 1.5g fiber, 4.4g sugar alcohol, 2.5g net carbs, 2.8g protein and 9g fat.  When you are just wanting a little bite of sumthin', this is what should fill your fingers!  :)

Ingredients for 11~1oz Truffles:
1/4 cup no sugar added Peanut Butter (I used Crunchy)
1/4 cup/2oz Cream Cheese, softened to room temperature
1/4 cup Almond Flour
1 large Carrot, approx. 2.5oz~grated to yield 1/2 cup
1/4 cup Walnuts
1/4 cup unsweetened shredded Coconut
1 Tablespoon Raisin or Cranraisins
1/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount

     Mix all ingredients together, minus 2 Tablespoons Monk Fruit.  Weigh out in 11~1oz portions, chill in fridge one hour.  Remove, roll into smooth balls and roll in remaining Monk Fruit.  Store in fridge.  Enjoy  :)



Apple Rose Cinnamon Rolls








     The next time you want to give a half dozen Roses, would you consider giving Apple Rose Cinnamon Rolls...they won't last as long...but hey, they are so darn good, who cares!?  Each delectable Rose is only 267 calories, 14.5g carbs, 1.9g fiber, 8g sugar alcohol, 4.6g net carbs, 11.4g protein and 21.9g fat.  Flowers never tasted so good!!!  ;)

Ingredients for 8 servings~
1 3/4 cups shredded Mozzarella
1oz/2 Tablespoons Cream Cheese
3/4 cup Almond Flour
1 Egg
Dash Salt
2 Tablespoon Butter, melted

Dash Cinnamon
1 red Fuji Apple, cut into 36 thin slices


     Melt Cheese and Cream Cheese for 1 minute in the microwave, stir til blended, then add in Flour, Egg and Salt.  Use mixer to finish incorporating and then knead for 2 minutes.  Wrap in Pam sprayed cling wrap and rest in fridge over night, or for a few hours if you are in a hurry.  When ready, roll out dough into a 10X15 rectangle on a Silpat liner.  Brush with melted Butter.  Cut into 6 equal 10 inch strips, sprinkle with Monk Fruit and Cinnamon.  Wet a paper towel, add 6 slices of Apple to paper towel and fold to cover Apples, microwave 30 seconds, should be softened.  Add Apples, overlapping ends slightly along 10 inch edge of dough strip, with Apple crests peaking over the dough, fold bottom half of dough up to meet top of dough, basically you are folding dough in half lengthwise, then roll up strip like a cinnamon roll, place in silicone cupcake liner, repeat process with the remaining 5.  Bake at 375 for 23 minutes.  Enjoy  :)

Avocado Fudge Pudding






     If you are looking for an ultra smooth rich creamy decadent dessert, this fits the bill.  AND, the great part is a little dab will do ya...a half cup will only cost you 228 calories, 34.7g carbs, 7g fiber, 24g sugar alcohol, 3.7g net carbs, 2.8g protein and 21g fat.  (Macros do not include whipped topping).  So if you are on the hunt for the perfect thing to satiate that lingering craving, I would definitely keep these on hand!  :)

Ingredients for 2 servings~
1/4 cup Whipping Cream
1oz/2 Tablespoons Cream Cheese, softened to room temperature
1 small ripe Avocado~3oz of pulp
1/4 cup Cocoa

Dash Cinnamon
Dash Vanilla
Whipped Topping, optional as garnish, not included in macros

     Beat Cream til stiff peaks, set aside.  Meanwhile, mix together softened Cream Cheese and ripe Avocado til smoothly blended together, and fold into Whipped Cream, continue to incorporate Cocoa, Monk Fruit, Cinnamon and Vanilla.  Add 1/2 cup to two different dishes, chill til ready to serve.  Garnish with Whipped Topping and sprinkle with Cinnamon, if desired, not included in macros.  Enjoy  :)


Rose Petal Hearts








     So Paige was in a quandary, I really wanted to do Chocolate with fresh edible flowers...but do you know how hard it is to locate those...and ensure they are safe...!?  I will just tell you it's very hard, but do you know what's not hard, ...dried Rose Petals...#sold.  Next I began to vacillate between solo Rose Petals, or the addition of dried fruit and seeds.  So I took a poll on social media...the people spoke, and the message revealed that it was pretty much personal preference.  Soooo...add what ever you want to your flowers, ....or don't ... it's all good man...errr, ...mom!  Each little heart is only 50 calories, 8g carbs, 3g fiber, 3g sugar alcohol, 2g net carbs, 1g protein and 5g fat (macros based on Chocolate and Rose Petals only).  Let your Chocolate be your own personal garden, grow with gusto!

Ingredients in 8 servings~
1 Lily's Premium Baking Bar, divided into 8 equal 1/2oz parts, the bar is already scored~ can sub with other favorite Lily's Bar

Dried Seeds~optional
Nuts~optional

     Using heart silicone shapes (sub with regular cupcake silicone liners), break a Chocolate serving into small pieces and microwave in 15 second increments til softened, should take about 2 rounds til melted. When melted and smooth in bottom, top with Rose Petals and let rest til hardened, add additional Fruit, Seeds, or Nuts if desired, not included in macros.  Repeat with remaining ingredients.  When set and solid, peel from silicone and Enjoy  :)

Salted Caramelized Cheesecakes








     When you are just wanting a little bit of sumthin sumthin, this is your ticket.  Not much..., but a couple bites will hit the spot.  Each of these tummy fillers are only 171 calories, 24g carbs, 3g fiber, 20g sugar alcohol, 1g net carbs, 4.3g protein and 16.3g fat.  Enjoy each savory bite slowly...and save the rest for 3 magical moments over the next few days.

Ingredients for four servings~
4oz/1 cup Cream Cheese
1 large Egg
2 Tablespoons Sour Cream

1.4oz (half a bar) Lily's Caramelized & Salted Stevia Sweetened Milk Chocolate, chopped
12 pieces sliced Almonds, optional

     Soften Cream Cheese in microwave, stir til smooth and blend in Egg, Sour Cream and Monk Fruit til well incorporated, pour equally into 4 silicone cupcake liners in tin.  Bake at 375 for 23 minutes, cool to room temperature.  Meanwhile, add chopped Chocolate to microwave safe bowl and heat at 15 second intervals til just melted, be very careful to not burn, spread equally on each Cheesecake, set 3 Almond slices in middle of each, rest in fridge til set.  Meanwhile, blend Confectioners and Almond Milk til smooth, add to baggie, snip corner and add decorative piping to perimeter.  Enjoy  :)

Blueberry Pecan Cheese Kringle







     We went with some friends to a Green Bay Packers game, and in the process were introduced to the "Kringle"!  AKA, a delicious Danish filled with Cream Cheese or Fruit, that literally melts in your mouth.  So what's a girl to do but try and create a sugar free version at home.  Each of the 8 servings are only 245 calories, 12.5g carbs, 1.2g fiber, 9g sugar alcohol, 2.3g net carbs, 10g protein and 21g fat.  Follow my lead or create your own path, so many fillings to choose from, so many fruits on the vine.

Ingredients for 8 servings~
1 3/4 cups shredded Mozzarella

     Melt Cheese and Cream Cheese for 1 minute in the microwave, stir til blended, then add in Flour, Egg and Salt.  Use mixer to finish incorporating and then knead for 2 minutes.  Wrap in Pam sprayed cling wrap and rest in fridge over night, or for a few hours if you are in a hurry.  When ready, roll out dough into a 10X15 rectangle on a Silpat liner.  Meanwhile, add Cream Cheese to microwave to soften, stir til smooth and blend in Sour Cream and Monk Fruit til fully incorporated and spread in middle, making a smaller rectangle with a 2 inch perimeter.  Cut a 2 inch slit angle on each corner, as well as even slits down the sides.  Fold the 2 ends down over the filling, and fold in each of the side pieces (the center will be exposed), and remove any excess unused dough.  Bake at 375 for 20 minutes, remove, rub with cold Butter on baked dough, sprinkle with Pecans and Blueberries.  Mix Confectioners Monk Fruit and Almond Milk til smooth, add to baggie, snip corner and drizzle over Kringle.  Enjoy  :)

Skillet Nachos








     You haven't lived til you have eaten Nachos out of a skillet...just sayin'...use your fingers and share or not...that is the question!  The entire recipe is 645 calories, 41g carbs, 16g fiber, 25g net carbs, 33.5g protein and 41g fat.  This crunchy crispiness is outlandishly delish.  If you don't believe me, listen for yourself!  ;)

Ingredients for one...or two, you decide~
1/4 cup Cottage Cheese
1 small (3.5oz) Avocado
Dash Lime Juice
Dash Salt
Dash Pepper
2 sheets Cut da Carb~cutdacarb.com (free shipping), cut into tortilla sized triangles
Coconut Oil Cooking Spray, or Olive Oil Spray
2 teaspoons Olive Oil
1oz Chedder, shredded
1.5oz Steak, cut into small bite size pieces
2 Tablespoons Sweet & Spicy G Hughes Sugar Free BBQ Sauce

     Mix Cottage Cheese and Avocado til smoothly blended, season with Lime Juice, Salt and Pepper to taste, set aside.  Spray Cut da Carb triangles with cooking spray, add Olive Oil to skillet, add triangles and toss to coat with Oil, heat til crispy, flip to crisp opposite side, season with Salt.  Top with Cheese, Guacamole', Beef, and garnish with BBQ sauce.  Enjoy :)
