Cherry Pecan Ice Cream

   Well well well, Kristy from Life Unbinged has done it again!  I saw her put this baby together and knew immediately I had to give this one a try.  Once again, I was right.  #worthit This is a nice treat to enjoy every once in a while.  The entire batch is only 470 calories, 60g carbs, 7g fiber, 53g net carbs, 29g protein and 16g fat.  I would definitely use it as two servings, but you do you dawg.  This is a fun one to try during fresh Cherry season, but using frozen is always an option.  Enjoy ;)

Ingredients for two servings~

1 cup Cottage Cheese

1 rounded cup pitted Cherries (approximately 7oz), chopped to desired size

Ripe Medium Banana (approximately 4oz)

1 Tablespoon chopped Pecans

     Add Cottage Cheese and half the Cherries in a blender and whip til smooth.  In a tupperware, mash banana and stir in remaining Cherries, then pour Cottage Cheese into container and continue to blend, sprinkle top with Pecans, and place in freezer til set, approximately a couple hours.  Enjoy ;)

     All my kids are good cooks, but only one of them have a Tomato garden.  Thanks to Chelsea, my youngest, I was able to enjoy this delicious homemade home grown Tomato Sauce.  I am hoping her older siblings are feeling the pressure to show her up and give mommy more gifts...I digress.  This is a very simple recipe, using as many ingredients from the back yard as possible.  There are no measurements, as well as no rules for consumption.  I made a Salad with my Sauce by topping Greens with Cottage Cheese, Beef Crumbles (Tempeh would be a great meatless protein option), Sauce and Green Bell Pepper Garnish.  It was delightful.  Hope you give this one a try!  :)

Ingredients ~

Diced Tomatoes (preferably Homegrown)

Diced Onion 

Crushed Garlic

Olive Oil

Diced Jalapeños as desired

Italian Seasoning as desired 

Basil as desired

Oregano as desired

     Drizzle Tomatoes, Onions and Garlic with Olive Oil, and roast at 425 for 45min-hour, til roasted to your desire, season as preferred, add to blender and slightly blend for thicker sauce, or blend to smooth if you prefer a creamier texture.  If you have a large quantity like my daughter did, she divides hers up in batches and freezes any extras.  Enjoy  :)

Everything Cottage Cheese Dip

 






     When you are in a pinch and need to be creative, my Everything Cottage Cheese Dip is one to try.  Perfect as a Potato Topper, or really any kind of vegetable would pair extremely well.  The entire thing is only 67 calories, 4g carbs, .7g fiber, 3.3g net carbs, 8.5g protein and 2.5g fat.  Super simple, so delicious, and the macros are friendly as well.  Try it, you'll like it!  ;)

Ingredients for one serving~

1/4 cup Cottage Cheese

2 teaspoons Nutritional Yeast (reduce to 1 teaspoon for a milder flavor)

Squeeze Lemon Juice, desired amount

Everything Bagel Seasoning, desired amount

     Add Cottage Cheese to blender and whip til smooth, stir in remaining ingredients til fully incorporated.  Combine with anything that suits your fancy.  Enjoy :)

Protein Cheesecake Muffins

     Are you looking to mix it up a bit for breakfast, ...quite frankly lunch, dinner, snack or even a dessert.  Then you are looking in the right place, keep reading.  This is protein in the most fun way possible.  Each of these 20 Protein Cheesecake Muffins are only 67 calories, 4.5g carbs, .5g fiber, 4g net carbs, 8g protein, 2.1g fat.  So the question becomes, how many make a meal.  Can you see how fast those grams of protein can add up!?  These rival the protein power of Beef or Chicken...!  These would even be great as a pre or post work out fueling.  So many options, so many bites to be had!  :)

Ingredients for 20 Muffins~

16oz container Cottage Cheese

4 Extra Large Eggs

2~5.3oz 0% Fage Greek Yogurt

2 scoops unflavored unsweetened Protein Powder (I use Quest Multi Purpose Protein Powder)

1 Tablespoon Lemon Juice

16oz container fresh Blueberries

     Add all ingredients except Blueberries to blender and whip til smooth, then add mixture to bowl and stir in Blueberries, drop by 1/4 cup into silpat lined cupcake tin, bake at 325 for 30 minutes.  Cool to room temperature, chill in fridge, best if over night.  Enjoy  :)

     Every once in a while you land on something too good to be true, and it's not even Christmas.  Shout out to Kristy at Life Unbinged for her creativity, you hit it right on the mark with this one lady!  So simple, so flavorful, so versatile.  The entire batch makes 2 cups, and is only 350 calories, 27.5g carbs, 6.5g fiber, 21g net carbs, 39g protein, and 10g fat.  Now, what to do with these couple cups of heaven.  My vote was sliced Jicama soaked in Lime Juice, sliced Peppers, Carrot Sticks, Cherry Tomatoes, Broccoli or even Baby Potatoes.  If you have any problems with dairy, this may not be the one for you, or if this is difficult to portion control then best to pass...otherwise move forward with gusto, and make sure this is part of your life FOREVER!!!🥳

Ingredients~

1 cup Cottage Cheese

1/4 cup Nutritional Yeast

Seasoning as desired (I used Chili Lime Seasoning)

1/2 can Rotel (I used the No Salt type)

1/2 can diced Green Chilis (feel free to add a full can, I did)

     Add Cottage Cheese to Blender and whip til smooth, then incorporate Yeast and Seasoning to blender and continue to mix, then stir in Rotel and Chilis.  If desired, heat before serving.  Enjoy 😉 PS. feel free to double the recipe if desired.

Sugar Free Cheesecake






     Don't you just love that feeling like you are getting away with something, when in reality it is completely legal, and highly encouraged!?  Such is the case with my Sugar Free Cheesecake.  Now listen up, this is NOT sweet, so don't come at me later if you try it.  If you are looking for a sweet to balance the tang, add yo' Berries!  This is perfect for breakfast, dessert or snack.  And if dairy doesn't bother you, this is definitely one to try.  The entire recipe is only 580 calories, 15.5g carbs, zero fiber, 81g protein, and 22.5g fat...did that protein number sink in!?  So yeah, no guilt having this any time of day,...even for dinner!  This is super simple to whip together, and let your imagination be your guide for toppings!  ;)

Ingredients for entire Cheesecake~

1 cup Cottage Cheese (my favorite is Daisy)

2 Jumbo Eggs

5.3oz 0% Fage Greek Yogurt

1 scoop unsweetened Protein Powder 

1 teaspoon Lemon Juice

Toppings as desired, preferably fresh fruit, not included in macros

     Add Cottage Cheese and Eggs to Blender, whip til smooth, then add in Yogurt and continue to blend, finally add in Protein Powder and Lemon Juice til fully incorporated, pour into parchment lined spring form pan, mine was 6 inches, bake at 325 for 40 minutes, remove, cool, chill in fridge over night.  Enjoy ;)

     

Turnips and Jalapenos

     When a friend issues a vegetable challenge, it must be accepted!  Actually this was a stretch for me as I was unfamiliar with Turnips, and not sure which direction to take. I, however, decided to go the typical root vegetable direction by dicing and roasting.  BTW, love love love the results.  This one is so simple, and a fun unique dish that is worth the try.  Turnips are mild, with a flavor that is a mix between Cabbage and Cauliflower.  So it's time to spread your wings and invest in a little variety.  Hello new side dish!  ;)

Ingredients~

Turnips, desired amount

Jalapenos, desired amount

Onion, desired amount

Olive Oil, desired amount

     Trim, skin and dice Turnips, along with Jalapenos and Onions, toss on parchment lined baking sheet.  Drizzle with Olive Oil, toss to coat, bake at 425 for 40 minutes, stir half way thru.  Enjoy ;)
