Banana Nut Snack Cake

     When you have a recipe that is so easy to make that your kids could do it, you have no choice but to make them do it!  Such is the case with my Banana Nut Snack Cake.  This is so simple, and perfect for a after (or before) school fueling, not to mention excellent for on the go as a pre/post workout treat.  For those that don't eat sugar this is plenty sweet enough on it's own, but if you need a little more flavor then add a thin smear of nut butter and top with sliced Bananas or Berries.  Each of these 8 dense pieces are only 296 calories, 36g carbs, 5.5g fiber, 30.5g net carbs, 15.5g protein and 10.5g fat.  These mild squares have super powers for macros.  Lovely combination of complex carbs, fiber, protein and fat.  Get your little ones involved and see if it doesn't open a love for the kitchen deep inside their soul!  :)

Ingredients for 8 servings~
3 ripe Bananas
4 extra large Eggs
16oz Cottage Cheese
3 cups Oats (not instant)
1/4 cup ground Flax Seed
1 teaspoon Baking Powder
1/4 cup chopped Walnuts

     Add Bananas to mixing bowl and beat with Beaters til smooth, stir in remaining ingredients, reserve a few Nuts to sprinkle on top if desired.  Pour into 8X11 parchment lined pan, sprinkle with remaining Nuts, and bake at 350 for 45 minutes.  Enjoy  :)

White Fish with Red Sauce

                                   







     If you are looking for a little Mediterranean flare, keep reading.  This simple, easy, yet elegant dish will have you drifting away to ocean breezes with every single bite.  All this and healthy too.  One big bonus is that you can make the Red Sauce ahead of time, so things come together swiftly when time to eat.  And this is so versatile that it can work great for a week night meal, or elegant enough to serve at a dinner party.  But most of all, it is just good, and good for you!  Put it on your must try list!😊

Ingredients for 4 servings~

4 Tomatoes, dice each Tomato into 8 pieces

2 large Carrots, trimmed, peeled and cut into about 8 pieces each

1 Onion, diced into large chunks

1-2 Jalapeños, deseeded and diced into about 8 pieces (Optional, sub with Cayenne Pepper if desired)

1 Tablespoon chopped Garlic

1 Tablespoon Olive Oil

Fresh Basil Leaves (sub with dried)

4 White Fish Filets

1-2 Lemons

Salt

Pepper

Sliced Olives

     Add diced Vegetables to parchment lined baking sheet, toss with Garlic and Olive Oil, bake at 400 for one hour, remove, cool slightly, and blend with Basil Leaves in heavy duty blender.  (Feel free to make a day ahead to allow flavors to merry).  Meanwhile, add Fish to parchment lined baking sheet, squeeze with Lemon Juice, and season with Salt and Pepper, bake at 400 for 15 minutes for thin filets, and 20 minutes for thick filets.  Remove from oven, squeeze with additional Lemon Juice if desired.  Top with prepared Tomato Sauce, and garnish with sliced Olives. Enjoy 😉

Blueberry Banana Cheesecake

     Cheesecake anyone!?  How about Cheesecake EVERYONE!!!???  And, if you make it my way, it would be a crime not to have it.  This is definitely in the no guilt category.  In fact, each of the 6 slices are only 217 calories, 24g carbs, 3g fiber, 21g net carbs, 16.5g protein, and 7g fat.  These macros are so phenomenal you could have this for a high protein breakfast, you might even call it a pre workout.  There is simply no reason not to try this one on for size.  You won’t regret a single bite!  ðŸ˜‰

Ingredients for 6 slices~
2 ripe Bananas
16oz container of Cottage Cheese
4 extra large Eggs
5.3oz Plain Greek Yogurt
Dash Lemon Juice
16oz container fresh Blueberries

     Add Bananas, Cottage Cheese, Eggs, Yogurt, Juice, and 3/4 of Blueberries to heavy duty blender.  Pour into parchment lined and cooking sprayed 9’’ Spring Form Pan, top with remaining Blueberries and bake at 350 for one hour.  Remove, cool slightly, and let sit in fridge overnight.  Garnish with additional fruit if desired.  Enjoy 😊

     To Bowl or not to Bowl, that is the question.  The great thing about my Fish Taco recipe is that it can be thrown in a Bowl, or nestled in a Taco Shell.  Either way you can’t go wrong.  And the fantastic thing about this dish is that it comes together in a flash.  Only 5 main ingredients in the Coleslaw, and the Fish comes together like a breeze.  This is one you will want to try over and over again! 🥰

Fish Tacos~
Swai or Tilapia Fish Filets
Italian Balsamic Vinegar (I get mine from Californiabalsamic.com, sub with favorite seasoning)
1 pound Coleslaw (I buy mine premade)
1 Red Bell Pepper, chopped
1 Bunch Cilantro, chopped
Purple Onion finely diced, optional
1/2 cup Apple Cider Vinegar
Everything Bagel Seasoning, optional if desired
Black Beans
Avocado slices
Cauliflower Taco Shells

     Put Fish on parchment lined baking sheet, drizzle with a scant amount of Italian Balsamic, or seasoning of choice, bake at 400 for 20 minutes.  Meanwhile, stir together Coleslaw, Pepper, Cilantro, Onion, and Vinegar, toss til well coated and season with Bagel Seasoning if desired.  If making a Bowl, fill bottom with Coleslaw, top with Fish, Beans and Avocado.  If making a traditional Taco, fill Shell as desired.  Enjoy 😊

     In a world of ultra processed food, we are always looking for healthy alternatives.  My Sunflower Seed Bread, fits that bill perfectly.  With only 5 main ingredients, this comes together in a flash with nothing but a bowl and a spoon.  I savor it for lunch all week, and I am happy every day when noon rolls around.  For 8 slices it is only 229 calories, 22g carbs, 5g fiber, 17g net carbs, 14g protein and 10g fat.  Those are amazing macros, and every bite you take is a swallow of good health.  This is a must try!😉

Ingredients for 8 slices~
2.5 cups Oats (NOT Quick Cooking)
16oz container of Cottage Cheese
2 Extra Large Eggs
1/4 cup ground Flax Seed
1/2 cup/2oz Sunflower Seeds (reserve a few to sprinkle on top)
1 teaspoon Baking Powder
Dash Everything Bagel Seasoning for garnish if desired

     Add everything to a bowl and stir til well incorporated.  Pat out into loaf shape on parchment lined baking sheet, sprinkle with reserved Sunflower Seeds and Garnish with Everything Bagel Seasoning if desired.  Bake at 350 for one hour.  Enjoy 😊 

No Noodle Lasagna

     This was one I was super excited about!  Who says you can’t have it all!?  My No Noodle Lasagna is the perfect example of how clean food is good food.  I can’t wait to share how easy it is to make your own sauce, you will never buy store bought again.  Each of these 6 hearty servings are only 337 calories, 27g carbs, 6g fiber, 21g net carbs, THIRTY FIVE grams of PROTEIN, and 11g fat.  (You saw that protein too, right!?). This is perfect to feed the family, or to save and have for lunches all week long.  PS. No one will notice the missing noodles. 😉

Ingredients for 6 hearty servings~
2 pounds chopped Tomatoes, I usually cut mine in about 8 pieces
1 pound cleaned and trimmed diced Carrots, I usually cut mine in about 6 pieces
1 diced Onion, I cut mine in large chunks
1 or 2 cleaned seeded chopped Jalapeños, optional 
1 Tablespoon chopped Garlic
1 Tablespoon Olive Oil
Dash Salt
Fresh Basil Leaves, amount desired
- - - - - - - - - - - - - - - 
1 pound 96% lean ground Beef
1 diced Onion
1 Tablespoon chopped Garlic
Dash Cayenne
8oz sliced fresh Mushrooms
1 diced Green Bell Pepper
24oz Cottage Cheese
1/3 cup Nutritional Yeast
Chopped Green Onion for garnish if desired

     From first set of ingredients, add everything but Basil Leaves to parchment lined cookie sheet, and toss til well coated with Olive Oil, bake at 400 for one hour, remove and cool slightly, add to heavy duty blender along with Basil Leaves, blend til smooth.  Store in fridge over night allowing the flavors to merry.  Meanwhile, add Beef, Onion, Garlic and Cayenne to skillet til cooked thru and Onion are soft, then add in Mushroom til cooked, and finish by add in Peppers til crisp tender, drain any excess juice.  Lastly stir together Cottage Cheese and Nutritional Yeast.  When ready to bake, add a cup of Sauce to parchment lined 8X11, then add half the Beef mixture, followed by half the Cottage Cheese mixture, repeat those layers and finish with remaining Sauce, bake at 400 for 45 minutes.  Garnish with Green Onions if desired.  Enjoy 😋

Blueberry Banana Cheesecake









          I will never give up putting the fun in my health filled food.  My philosophy is that you can have it all without suffering.  And I intend to prove it, my Blueberry Banana Cheesecake is part of that data.  Each of the 6 sugar free pieces are only 217 calories, 24g carbs, 3g fiber, 21g net carbs, 16.5g protein and 7g fat.  You might think this is dessert, but I think it could easily be a breakfast.  Up to you to decide how many slices make a serving.  Feel free to garnish it as desired, I found Strawberries to be a nice topper, but any fruit or nut would do!  Isn't it wonderful to enjoy deliciousness guilt free!?  ;)

Ingredients for 6 slices~
1 container 16oz Cottage Cheese
4 Extra Large Eggs
2 medium ripe Bananas
5.3oz container Greek Plain Yogurt
Dash Lemon Juice
16oz pint of fresh Blueberries

     Add all ingredients to heavy duty blender, reserve a few Berries to sprinkle on top.  Blend til batter is smooth, pour into a parchment lined 9'' Springform pan that has been sprayed with cooking spray.  Garnish the top with reserved Berries, bake at 350 for one hour, add an additional 5-10 minutes if top still wiggles.  Remove and cool, rest in fridge for an hour at least or overnight to set.  Serve with additional garnish if desired.  Enjoy  :)
