Sweet Potato Pancakes

     If you love Pancakes like I love Pancakes then best listen up, yo!  And, if Gluten Free, Flour Free, Nut Free, non GMO and all around natural is what you are looking for then I have answers!  This beautiful stack of Sweet Potato Pancakes are only 262 calories, 25g net carbs and 6g protein.  For flavor that can't be beat, this has to go on the "must try list"!

Ingredients for one yummy Stack~
4oz baked and mashed Sweet Potato
1 Jumbo Egg
1 Tablespoon Ground Flax Seed
Dash Cinnamon
Dash Vanilla
1 inch slice of Banana (approx .75oz), diced
1/2 Tablespoon Powdered Peanut Butter, combine with Water to desired consistency
6 Lilies Stevia Sweetened Dark Chocolate Chips

     Mix together Sweet Potato, Egg, Flax Seed, Cinnamon and Vanilla til smooth batter, divide batter into 4 equal portions, fry in Pam coated skillet til golden on each side (I noticed it takes a little longer for these to cook all the way thru).  Stack the 4 Pancakes, top with sliced Banana, drizzle with Peanut Butter topping, and garnish with Chocolate Chips.  Enjoy  :)
