Crock Pot Corned Beef and Cabbage






     Whether it's a Holiday, a large crowd, or just an everyday dinner, the Crock Pot can be your best friend.  I decided to try my hand at Crock Pot Corned Beef and Cabbage for St Patrick's Day.  This worked out fabulous with so little clean up.  These portions are HUGE, each of the four servings are 446 calories, 33g net carbs and 22g protein.  Even if you are not Irish, you would still be lucky to fill your belly with this traditional fare.

Ingredients for four servings~
1 pound Yukon Gold Potatoes, diced (sub with Red Potatoes)
1 pound Baby Carrots
1 medium Onion, diced
1 pound Corned Beef
1 cup Chicken Broth
1 Tablespoon Worcestershire
1 Tablespoon chopped Garlic
1 teaspoon Dry Mustard
1 small head Cabbage, cut in four equal pieces

     Line Crock Pot with Crock Pot Liner, otherwise coat inside with cooking spray.  Add Potatoes, Carrots, Onions and then Beef to Crock Pot.  Mix together Broth, Worcestershire, Garlic and Mustard and pour on top.  (Sprinkle with Seasoning Pack if included with meat)  Cook on low for 8-10 hours or high for 6-8 hours.  Add Cabbage half way thru cooking.  Enjoy  :)
