Clover Cookies






 Wanna get lucky!?  These Clover Cookies will have your dice landing on "snake eyes" with every roll at the end of the rainbow!  Not only are they cute, but the entire batch of Shamrocks are a charming 666 calories, 22g net carbs, 48g protein and 38g fat.  Don't be green with envy, kick up your crafty heels, get your green on and think about who you want to share your pot of gold, err...cluster of clover with.  Then put on your famous Leprechaun smile and let that special person know that "I am luckier for me knowing you"... ;)

Ingredients for 4 Shamrocks~
2oz baked, cooled, peeled Sweet Potato, mashed
1 Tablespoon melted Coconut Oil
 1/4 cup Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 jumbo Egg, room temperature
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1 Tablespoon Butter, room temperature
1/2 scoop Quest Vanilla Milkshake Protein Powder
2 Tablespoons 30 cal/cup Almond Milk
Green Food Coloring
Green Sugar Sprinkles, if desired for garnish (not included in macros)

     Mix all dough ingredients in first section together and pat out on Silpat (or use a Pam sprayed sheet of wax or parchment paper) into a 1/4 thick inch rectangle.  Once flattened, use 2 inch heart shape cookie cutter and cut out 16 hearts, reserve the scraps (or use Shamrock Cookie Cutter).  Pick up Silpat and peel off hearts and arrange on another Silpat lined cookie sheet in the shape of four leaf clover, there may be space in the middle, if so, use scraps to fill in center as well as shape a stem for clover, repeat 3 more times.  Bake at 350 for 8-10 minutes, remove and cool.  Meanwhile, stir together Butter, Protein Powder, and Milk til smooth, add enough Food Coloring to desired shade of Green, and stir to incorporate.  Frost cooled Shamrocks, and add Sprinkles if desired.  Find your special good luck charm and eat them together while searching for your pot of gold at the end of the rainbow!  Happy St Patrick's Day, Enjoy  ;)
