Keto Zucchini Pizza Medallions







     This is one of those dishes where you feel like you really can have it all.  Fun feisty flavor will fill your every bite!!!  Enjoy the entire dish for only 493 calories, 8g carbs, 2g fiber, 6g net carbs, 25g protein and 42g fat.  Or split it with your buddy and enjoy a mixed green salad with cherry tomatoes and a splash of Ranch.  Either way you can't go wrong with this fantasy entree'!  :)

Ingredients for one large serving~
1 medium Zucchini, sliced in medallions
1 Tablespoon Olive Oil
Dash Salt
Dash Pepper
Dash Garlic Powder
1/4 cup Pizza Sauce, I used Rao's Spaghetti Sauce (no added Sugar)
1/4 cup ground Beef crumbles
2oz Kerrygold Cheese, shredded~ sub with shredded Parmesan Note:  I grate my own, it's so much better!!!
Parsley for garnish, if desired

     Dice Zucchini, rub with Oil, season as desired, lay in parchment lined baking dish and cook at 425 for 25 minutes.  Remove, top with Sauce, Beef, Cheese and Parsley, return to oven for 10 minutes.  Enjoy  :)
