Honey Bears







     Step One of this recipe is to find a great friend who will walk with you a couple miles to a field, then help you pick a cup of dandelion heads...thanks Jennifer!  Step Two, find a field that hasn't been sprayed with pesticides, nor used as a restroom for pets.  This recipe is a fun project, and no calories!  You will need a Gummy Bear silicone mold, if not, any candy mold will do, or use wax paper as a back up.  So, follow along for this all natural plant based candy, and start lacing up your tennis shoes!

Honey Bears~
1/2 cup tightly packed Dandelion heads
1/2 cup Water
2 slices Lemon
1/4 cup Lakanto Golden Monk Fruit~use code Paige20 for discount at checkout

     Rinse Dandelions in a strainer, add to saucepan with Water and Lemon, bring to simmer, add lid and simmer for 15 minutes, remove from heat and cool, set in fridge overnight.  The next day, pour contents thru strainer into a bowl, press out any extra juices, return to saucepan, add Monk Fruit, simmer on low 15 minutes, stirring constantly, then remove from heat.  When cool enough to handle, using a syringe draw up liquid and fill in bear molds, set in fridge til solid.  Be very careful, as this hardens quickly when cools, you will need to work fast with the warm liquid.  If you have no mold, drop on wax paper and set in fridge til solid.  Enjoy this fun project.  :)
