Chocolate Covered Coconut Cashew Truffles
Sugar free Truffles .... WWWWHHHAAA !!!??? Welp, its true !!! Using my Coconut Cashew Quest Bars, I have made the most wonderful little treats !!! And now, you can too!!! These are only 39 calories, .9g carbs, and 2.76g protein per truffle. Very simple to make so I hope you will get brave and try it out !!! :)
Ingredients~
1/2 Tablespoon unsweetened Cocoa Powder
1/2 Tablespoon Coconut Oil, melted
1/2 Packet Stevia
1 Coconut Cashew Quest Bar
8 Cashew Halves
1 Tablespoon unsweetened Coconut Flakes
Cut the Bar into 8 equal pieces and lay a half Cashew in each one, press down and roll into a ball around the nut. Dip in Chocolate and rest on wax paper, repeat with remaining pieces and set in freezer 5-10 minutes til set up and hardened. Repeat process, but after rolling in Chocolate a second time, then roll in coconut while still wet enough for adherence. Repeat 7 more times and if there is remaining Coconut then you can use to sprinkle on top. Store in refrigerator if there is any left !!! Enjoy :)
Frosted Cinnamon Roll Muffins
Now you can make Cinnamon Rolls every Sunday morning with NO GUILT !!! In fact, I encourage it !!! These tin full of moist goodness are only 153.7 calories, 8g carbs and 18.9g protien, for one muffin and 1/2 Tablespoon Frosting. I really hope you will try these out!!! ;)
Ingredients~
2 Cinnamon Roll Quest Bars
3oz or 1/2 heaping cup chopped Apple
1/2 cup Egg Whites
1/3 cup 0% or 2% Greek Fage Yogurt
1/2 cup Oats
1 scoop Vanilla Protein Powder
1/2 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
Ingredients for Frosting~
Vanilla Protein Powder
Vanilla Almond Milk ( 30 cal/cup)
Dash of Stevia/Truvia, optional
Line 6 Muffin Tins with Silpat liners and spray with Butter Pam. Divide one Bar into 6 pieces and microwave each piece for about 15 seconds and pat into bottom and up sides as far as possible of liner, repeat with other 5 pieces. Blend rest of ingredients ( minus the other Bar) in Magic Bullet til smooth, and pour equally into the 6 muffin tins. Chop remaining Bar into as small as possible pieces and divide equally among tins and sprinkle on top. Bake at 350 for 20 minutes. Meanwhile, for Frosting, mix 2-3 Tablespoons Vanilla Protein Powder with 2-3 Tablespoons Almond Milk, ( Stevia optional) depending on your desired consistency, and chill til ready to use. When done baking, Cool and spread with 1/2 Tablespoon Frosting. Store in refrigerator. Enjoy :)

3 Ingredient Cookie's for Two !!! ;)
I just love simple !!! It makes the recipe taste even BETTER !!! HA ( I am so darn lazy)... Anyhoo, nuff about me ... These are so quick and easy to throw together last minute, it would be a shame not to treat yourself and your honey any night of the week. I actually added a little spice, so technically it is a 6 ingredient cookie, but hey ... spice optional ...if it's the weekend, definitely add the spice! The best part is that it makes 6 cookies, for 53 calories, 9.5g carbs, and 1.2g protein per cookie! ;)
Ingredients~
4oz mashed Banana
1/2 cup Quick Oats
2 Tablespoons Grain Sweetened Organic Carob Chips
Dash Cinnamon, Vanilla and Lite Salt, optional ( but I added it in mine)
Mix in one bowl and divide into 6 and drop on Silpat lined cookie sheet. Bake at 350 for 10 minutes. Enjoy :)
Orange Lemon Lime Steal Head Trout
My friend, Bonnie, has lotsa great ideas and this was one of them !!! It felt more like a art project vs dinner! So very beautiful to make ! If you want to try something different, then give this citrus fun a try ;)
Ingredients~
Steel Head Trout
EVOO
1 Lemon, sliced
1 Orange, sliced
1 Lime, sliced
Fresh Herbs, such as Oregano, Tyme, Rosemary and Basil leaves ( I used Basil and Oregano)
Diced Onion
Salt and Pepper, to taste
Lay long piece of Fish on Parchment Paper cookie lined sheet. Brush Fish with EVOO, and top with Herbs and Onions. Then top with sliced fruit and fold Parchment Paper to seal into tight pocket. Bake at 450 for 20 minutes or until flakes easily. Enjoy ;)
Strawberry Cheesecake
Everybody loves a little Strawberry Cheesecake, and especially if you can have a generous piece for 155 calories, 6.25g carbs and 22.25g protein! One piece is an 1/8 of a 9" Springform Pan. Check it out ;)
Ingredients~
4 Strawberry Cheesecake Quest Bars
4 Dannon Greek Light&Fit Strawberry Yogurt
1 cup Egg Whites
1 scoop Vanilla Protein Powder
Dash Cinnamon
Dash Vanilla
Fresh Strawberries for garnish, optional
Spray bottom round of 9" Springform pan with Pam after removing from Form. Microwave 1 Bar for 15 seconds and pat onto half of Round, repeat with another bar to fill in other half of circle. Snap round back into Pan. Mix Egg Whites, Yogurt, Protein Powder, Cinnamon and Vanilla and pour half of mixture into the pan. Chop the remaining 2 Bars into small pieces and sprinkle half of the pieces onto batter and gently spoon remaining batter on top. Lay the remaining pieces around the outter edge of pan and if there are any pieces remaining, then sprinkle around top. Bake at 325 for 40-45 minutes or until slightly wobbly. Chill in refrigerator over night and garnish each piece with one diced Strawberry if desired. Enjoy ;)
Cookie Dough Chocolate Covered Truffles
Dontcha just love Chocolate Truffles!!!??? Well now they can be part of your everyday diet!!! Feel free to pop one of those suckers in your mouth every night after dinner! These are sugar free, gluten free, and vegan friendly! Each Truffle has 31.75 calories, .38g carbs, and 2.63g protein!!! Even if you have all 8 pieces as a healthy snack it would only be 255 calories, 3.5g carbs and 21.5g protein, can't be that ! This is every chocolate lovers dream !!! ;)
Ingredients~
1 Cookie Dough Quest Bar
1/2 Tablespoon Coconut Oil
1/2 Tablespoon unsweetened Cocoa Powder
1/2 packet of Stevia
Cut Bar into 8 equal portion, and roll into 8 balls. Melt the Oil and stir in the Cocoa and Stevia. Then dip the balls into the chocolate mixture and shake off, then transfer to wax paper to dry, repeat with the other balls. Refrigerate for 5-10 minutes and re dip with remaining chocolate. If there are any left overs, store in the refrigerator. Enjoy ;)

Chocolate Chunk Banana Protein Bread
It pays to follow the Quest Nutrition Facebook page !!! Last week I was awarded their Recipe of the Week and this week I noticed the new Recipe of the Week was by Andrea's Protein Cakery! That's how I discovered Andrea and have been OBSESSED with her recipes all week. I simply can't try them out fast enough, and so far they all ROCK !!! This was no exception, as well as fun and easy to make !!! Next time you are hankering for some dessert bread thats good for you, give this a try! You will be delighted with the nutritional stats, for an 1/8 of the loaf, it is 122 calories, 9.75g carbs, and 15g protein. This is not your standard loaf of bread!!! ;)
Ingredients~
6 egg whites ( I used 1 cup plus 2 Tablespoons Egg Whites)
2 Tablespoons Chocolate Almond Milk ( 45 cal/cup)
1 cup Vanilla Protein Powder
2 Tablespoon unsweetened Cocoa Powder
Dash Cinnamon
Dash Vanilla
Dash Lite Salt
1/2 teaspoon Baking Powder
2 medium Bananas, mashed ( 236 g)
1 Quest Double Chocolate Chunk, diced into small pieces.
Mix first 8 ingredients, then fold in Bananas and Quest Bar pieces. If batter is too thick, you can add another 1-2 Tablespoons Almond Milk. Line a loaf pan with parchment paper or spray with Pam. Pour batter into pan and bake at 325 for 40-50 minutes,til toothpick comes out clean or til springs back when touched lightly. Remove and cool completely (brings out the flavors), then slice and enjoy !!! ;) Store in refrigerator or freezer.
