Cherry Pecan Strudel Muffins






     Cherry Pecan Strudel Muffins is a good way to start your day...or end your day...or celebrate mid morning... or afternoon!  Either which way, a party will ensue when you find out each little delight is only 136 calories, 4g net carbs and 6g protein.  Time to cut loose, kick up your heels and strudel a muffin!

Ingredients for 10 Muffins~
1 Quest Cinnamon Roll Protein Bar
1 Tablespoons melted Nutiva Coconut Manna or Butter
1/4 cup melted White Chocolate Sweet Spreads
1 extra large Egg
Dannon Light&Fit Greek Cherry Yogurt
1/2 cup So Delicious 35 cal/cup Cashew Milk
1/4 cup thawed frozen pitted Cherries, diced
2 Tablespoons Pecan pieces
1/4 cup Nutiva Coconut Flour
1/4 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
1/2 container 7oz 2% Fage Greek Yogurt
1/2 Tablespoon Swerve Confectioners Erythritol

     Microwave unwrapped Quest Bar for 20 seconds and pat thin on Silpat lined cookie sheet, bake at 350 for 5-7 minutes til golden brown.  Remove, cool, and grind to powder in Magic Bullet or blender.  Combine with melted Coconut Manna or Butter til crumbly, set aside.  Meanwhile, stir together Sweet Spreads, Egg, Yogurt, Cashew Milk, Cherries, Pecans, Coconut Flour, Granular Erythritol, Baking Powder, Cinnamon and Vanilla.  Pour into 10 Silpat lined cupcake tins, top evenly with Cinnamon Roll Strudel mixture, bake at 350 for 29 minutes.  While baking, combine Fage Greek Yogurt and Confectioners Erythritol and add to baggie, and snip corner.  Drizzle with Yogurt frosting on cooled Muffins.  Enjoy  :)
