Chocolate Chip Muffins






     Chocolate Chip Muffins might just be my best muffins yet!  If you don't believe me, try them for yourself!  Not only is the flavor superb, the macros can't be beat!  Each of these 8 moist tender wonders are only 103 calories, 2g net carbs and 6g protein.  Whatcha' havin' for breakfast tomorrow!?

Ingredients for 8 Muffins~
1/4 cup Coconut Manna Coconut Butter, softened
1 jumbo Egg
1 cup 35 cal/cup So Delicious Cashew Milk
1 scoop Quest Salted Caramel Protein Powder
1/4 cup Nutiva Coconut Flour
1/4 cup Swerve Granular or Confectioners Erythritol
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
3 Tablespoons Lily's Stevia Sweetened Dark Chocolate Chips

     Stir together all ingredients except for one Tablespoon Chocolate Chips, drop batter equally into 8 Silpat lined cupcake tins.  Sprinkle last Tablespoon Chocolate Chips evenly on top of Muffin batter.  Bake at 350 for 25-30 minutes, watching for crowns to rise.  Careful to not over bake as Protein Powder baking can become dry as a result.  Enjoy  :)
