Barbecue Chicken Zucchini Pizza








     Do you have all the desire for pizza but none of the willpower to resist more than one piece!?  Now you don't have to, two pieces are perfectly legal!  Not to mention the more you eat the more veggies you will be inhaling!  You have to try out this Zucchini Crust Pizza and experience the miracle in turning ho-hum into YUM!!!  Each of the 8 slices are only 202 calories, 9.6g net carbs and 25.5g protein.  With stats like these, there's no reason not to put this on your menu as soon as possible!  ;)

Ingredients for 8 slices of Crust~
1 large Zucchini (approx 12oz), grated
1 jumbo Egg
1/2 cup Egg Whites
1 scoop Quest Multi Purpose Baking Mix
1/4 cup Betterbody Foods Coconut Flour
1/4 cup Nutritional Yeast
1/4 cup shredded Mozzarella
1 teaspoon Salt
Dash Garlic Powder
Dash Onion Powder
Dash Italian Seasoning

     Grate Zucchini into dish towel and finish by squeezing excess liquid thru towel in ringing motion.  Stir in remainder of ingredients and spread on Pam coated pizza stone, bake at 375 for 32 minutes or til golden brown.  Remove and set aside.

Ingredients for Toppings~
1/4 cup Barbecue Sauce
1 pound grilled and diced Chicken Breasts
1/4 cup crumbled Goat Cheese
4oz Corn, cooked and sliced from cob
1/2 sliced Red Bell Pepper
1/2 sliced Green Bell Pepper
1 thick sliced Purple Onion
1 diced Roma Tomato, drain on paper towel
4 slices cooked and crumbled Turkey Bacon
Cilantro, for garnish after cooked, if desired

     Layer Toppings on Crust in order listed, bake at 425 for 12 minutes, remove and top with fresh Cilantro if desired.  Slice into 8 pieces and Enjoy  :)
