Gruyere Asparagus Quiche
When you have a sweet friend give you homemade Asparagus from her garden, what is to do but make Quiche!? Time for a healthy make over challenge, all the while maintaining the rich flavors of Eggs, Cheese, Veggies and Fat (yes, FAT...don't be a hater)! #challengeaccepted Each of the 8 slices are only 288 calories, 5.7g net carbs and 13.8g protein. Let's eat Quiche y'all ;)
Ingredients for 8 slices crust~
2 jumbo Eggs
1 Tablespoon Extra Virgin Olive Oil
Dash Pepper
1 cup Nutiva Coconut Flour
1 stick Butter, sliced
Stir together Eggs, Oil and Pepper. Add Coconut Flour and sliced Butter, stir into mixture and then use pastry cutter to fully incorporate. Pat into Pam sprayed pie plate on bottom and up edge, bake at 400 for 10 minutes. Remove and set aside.
Ingredients for 8 slices filling~
2 Roma Tomatoes, sliced and diced and drained for several hours on paper towel
1.5 Tablespoons Butter
1 medium Onion, diced
1 Tablespoon chopped diced Garlic
8oz sliced fresh Mushrooms
4 slices raw Turkey Bacon, sliced short wise
4oz sliced fresh Asparagus, diced
3oz grated Gruyere, grated
2 jumbo Eggs
Heat Butter in skillet, add diced Onions, and Garlic til golden brown. Then add in sliced Mushrooms til cooked thoroughly, then add in sliced Bacon til crisped, and finish with Asparagus til crisp tender. Remove from heat and stir in Gruyere and Eggs and pour in baked crust and top with diced Tomato. (If desired you can reserve and top Quiche with some of the Asparagus Spears vs stirring all into batter.) Bake at 400 for 20 minutes, covering edge with foil as to not burn edges of crust. Enjoy :)
