Breakfast Bacon and Egg Cups

     If your mornings are as hectic as mine, I have an idea for you!'re welcome...  My Breakfast Bacon and Egg Cups are a perfect solution for a busy start to the day, and the real treat is the fact they can be made ahead of time and enjoyed all week ready to pull out of the fridge any time you please.  Each of these are only 103 calories, .6 carbs (yes, you read that right, only .6), and 10.7g protein ... if you are looking for good deals first thing in the morning this would be it!  :)

Ingredients for 12 Bacon and Egg Cups~
2 cups (9oz) of riced Cauliflower (add Cauliflower Florets to food processor and blend to rice consistency, making sure to not over process.  Can be done a day ahead)
1 scoop Quest Multi Purpose Mix Protein Powder
1/4 cup grated Cheddar Cheese
1 jumbo Egg
6 slices Turkey Bacon, cooked and ground to powder in Magic Bullet
Dash Pepper
12 MEDIUM Eggs (make sure to get Medium, larger Eggs won't fit)

     Stir together riced Cauliflower, Protein Powder, Cheese, Jumbo Egg, powdered Bacon, and Pepper~ distribute equally among 12 silpat lined cookie tin and press along bottom and up sides.  Fill each cup with one Medium Egg and bake at 375 for 20-30 minutes, depending on how done you like your Eggs.  Garnish with Avocado or diced Tomato if desired.  Enjoy  :)
