Cassava Flour Taco Shell







      First of all I want to give a thank you and a shout out to www.ottosnaturals.com for sharing some of their superb Cassava Flour with me.  Otto's Cassava Flour is unlike anything your kitchen has ever experienced.  It is an all-natural, amazing, grain-free replacement for wheat flour and can often be used as a 1:1 substitute in countless recipes.  There are no fillers.  Only 100% Yuca (Cassava) and water are used to create this single-ingredient wonder.  Not to mention, they lovingly provide a Taco Shell recipe on the back of their bag that was created by Cara at www.forkandbeans.com.  When I saw that fun challenge, I knew I had to give it a try... #whynot!?  I channeled by inner Martha Stewart and tried my best to make her proud...my circles aren't perfect, so no one tell her...other than that, pretty darn good!  :)

Ingredients for 6 Taco Shells~
3/4 cup Ottos Naturals Cassava Flour (www.ottosnaturals.com)
1/4 teaspoon Pink Himalayan or Sea Salt (can sub with regular Salt)
2 Tablespoons Extra Virgin Olive Oil
1/3 cup Water

     Stir together Flour and Salt, add Olive Oil and Water and stir til well combined.  Knead a few times, picking up any crumbs.  If too dry, add a few drops more of Olive Oil.  Break dough into two equal balls, then break each ball into 3 more equal balls, for a total of 6.  Each ball should weight about 1 1/3oz.  (One tip I discovered, if ball is too dry to pat into circle, spray with a light coating of Pam Olive Oil Spray)  Add balls one at a time between two pieces of Parchment Paper and roll into circle, DO NOT use Wax Paper, it won't work.  Peel off Parchment Paper and lay on hot non stick skillet or cast iron skillet til starts to bubble, then flip to other side and brown equally.  Stack on plate and cover with hand towel til ready to serve.  Enjoy  :)
