University Sugar Cookies

     It doesn't take a college degree to know that University Sugar Cookies are good for you!  True fact.  But you can decide for yourself... each of these 24 frosted beauties are only 108 calories, 1.3g net carbs, 4.3g protein and 8.8g fat (serving size is 1oz dough and 1 Tablespoon frosting).  In fact, I heard a rumor they will be serving these at the next Mensa Society gathering...I might have heard that gossip wrong,... maybe it was the Rhodes Scholar get together...  Anyhoo, if you want to celebrate your formal education, dust off your favorite cookie cutters and get to work.  And for those who are wondering, WSU stands for Wichita State University, where I graduated with a Bachelors in the Science of Nursing!  :)

Ingredients for 24 frosted cookies~
4 Tablespoons Butter, softened to room temperature
4oz Cream Cheese, softened to room temperature
2 Extra Large Eggs, room temperature
1 cup Almond Flour
1/2 cup Coconut Flour
3/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1 teaspoon Baking Powder
Dash Vanilla
Dash Lite Salt

4 Tablespoons Butter, softened to room temperature
4oz Cream Cheese, softened to room temperature

4 scoops Vital Proteins Collagen Peptides
1-2 Tablespoons 30 cal/cup Almond Milk, as need for desired consistency

     Mix first set of ingredients til well combined, chill in fridge for an hour.  When ready, set cookie cutters on Silpat lined cookie sheet, weigh out 24 one ounce portions, press dough inside each cookie cutter, then gently remove cookie cutter leaving shaped dough on Silpat lined cookie sheet.  Repeat with remaining dough, using what ever letters you desire.  Bake at 350 for 10-12 minutes.  Meanwhile, mix second set of ingredient til well combined, add food coloring if desired and decorate as you wish.  Enjoy  :)
