Grad Cap Sugar Cookies








     This time of year there are many celebrations, graduations of all sorts take place with abandon.  There is no reason not to enjoy the festivities to the fullest, especially when you can add Grad Cap Sugar Cookies to the party.  Each of these sugar free darlings are only 162 calories, 2g net carbs, 7g protein and 13g fat (based on 1.5oz dough and 1.5 Tablespoon frosting).  Best wishes to all those moving forward, you dun it, congrats!  :)

Ingredients for 16 frosted cookies~
4 Tablespoons Butter, softened to room temperature
4oz reduced fat Cream Cheese, softened to room temperature
2 jumbo Eggs, room temperature
1 cup Almond Flour
1/2 cup Coconut Flour
3/4 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
Dash Vanilla
Dash Lite Salt

4 Tablespoons Butter, softened to room temperature
4oz reduced fat Cream Cheese, softened to room temperature
1 cup Swerve Confectioners Erythritol
4 scoops Vital Proteins Collagen Peptides
1-2 Tablespoons 30 cal/cup Almond Milk, as need for desired consistency

2.75 inch Circle Cookie Cutter
2.25 inch Square Cookie Cutter

     Mix first set of ingredients til well blended, chill in fridge for one hour.  When ready add 1 ounce dough to circle cut out and press into place on Silpat lined cookie sheet, remove cookie cutter and place rectangle cookie cutter (I used a square cookie cutter and bent it into a rectangle), in place over circle, add another half ounce of dough to fill in remaining rectangle, lift cookie cutter and SLIGHTLY press together, you still want to be able to see score lines, repeat 15 more times with remaining dough.  Bake at 350 for 10-12 minutes.  Meanwhile, mix second set of ingredients til thoroughly combined.  Using 1.5 Tablespoons of frosting per cookie, decorate cooled cookies as desired.  Adding food coloring to Frosting, I made a yellow face, red and blue cap, then piped an out line on cap, smiley face and tassel.  Enjoy  :)
