Pumpkin Chocolate Chips







     Don't you agree that Chocolate Chips Cookies are America's all time favorite dessert!?  If not number one, it certainly has to be in the top three.  But, have you ever ventured to add a little Pumpkin during the Fall months?  It's certainly something to consider.  Each of the 25 cookies are 106 calories, 8.7g carbs, 2.4g fiber, 4.8g sugar alcohol, 1.5g net carbs, 2.8g protein and 10.2g fat.  So, spice up your kitchen the next time you have a hankering for Chocolate Chips!  ;)

Ingredients for 25 Cookies~
1/2 cup Butter, softened to room temperature
1/2 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount
2 Extra Large Eggs
1/2 cup Pumpkin
2 cups Almond Flour
1 teaspoon Baking Powder
Dash Pumpkin Pie Spice (sub with Cinnamon)
Dash Vanilla
1/2 cup Lily's Stevia Sweetened Dark Chocolate Chips

    Mix Butter and Monk Fruit with beaters til well blended, next incorporate Eggs, then blend in Pumpkin, Flour, Baking Powder, Pumpkin Spice, and Vanilla til well incorporated.  Fold in Chocolate Chips, drop by 2 Tablespoons of dough per Cookie, bake at 350 for 18 minutes on silpat lined cookie sheet.  Cookies will have a cake like texture.  Enjoy  :)
