Blueberry Protein Overnight Oat Parfait
It’s good to have friends for several reasons, but it’s especially fun when they give you good ideas. This recipe was inspired by my friend Leslie, who shared a blueberry overnight oat parfait idea and asked if I could create a Real Food Recovery version. I loved turning those simple flavors into a protein-rich, satisfying breakfast made with real food ingredients.
Breakfast can be both nourishing and satisfying when it is built around foods that support your body and keep you feeling full. This Blueberry Protein Overnight Oat Parfait combines creamy oats, protein-rich Greek yogurt, whey protein, chia seeds, naturally sweet bananas, fresh blueberries, and a homemade blueberry chia sauce for a breakfast that feels like a treat while providing lasting energy.
The combination of fiber from oats, chia seeds, and blueberries with protein from whey powder and Greek yogurt creates a balanced meal that supports fullness and steady energy. Cinnamon adds warmth, while the homemade blueberry chia sauce creates beautiful layers without added sugar.
This recipe is a perfect example of how simple ingredients can come together to create something that feels abundant and enjoyable. Healthy eating doesn’t have to mean boring or restrictive—it can look and taste like a beautiful parfait you’re excited to eat.
Blueberry Protein Overnight Oat Parfait
Makes 4 servings~
Ingredients:
Blueberry Chia Sauce
2 cups frozen blueberries
1 tablespoon chia seeds
1 teaspoon fresh lemon juice
½ teaspoon vanilla extract (optional)
Banana Protein Overnight Oats
2 cups rolled oats
2 tablespoons chia seeds
2 ripe bananas, mashed
2 cups unsweetened almond milk
2 scoops plain whey protein powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
Pinch of salt
1 cup fresh blueberries, gently folded in
For the Parfaits
2 cups plain nonfat Greek yogurt
Extra fresh blueberries for garnish (optional)
Directions:
Make the Blueberry Chia Sauce~
Add the frozen blueberries to a small saucepan over medium-low heat. Cook for 8–10 minutes, stirring occasionally, until the berries soften and release their juices. Lightly mash some of the blueberries with the back of a spoon, leaving plenty of whole berries for texture. Remove from the heat and stir in the chia seeds, lemon juice, and vanilla, if using. Allow the sauce to cool for 15–20 minutes until it thickens. Refrigerate until ready to assemble.
Make the Overnight Oats~
In a large bowl, mash the bananas until mostly smooth. Whisk in the almond milk, whey protein powder, cinnamon, vanilla, and salt until well combined. Stir in the rolled oats and chia seeds. Gently fold in the fresh blueberries. Cover and refrigerate overnight, or for at least 4 hours, until thick and creamy. If needed, stir in a splash of almond milk before serving.
Assemble the Parfaits~
Divide half of the overnight oats among four jars or glasses. Top with a layer of Greek yogurt, followed by a layer of blueberry chia sauce. Repeat the layers with the remaining oats, yogurt, and blueberry sauce. Finish with a spoonful of blueberry sauce and a few fresh blueberries, if desired.
Serve immediately or refrigerate until ready to enjoy.
A satisfying breakfast doesn’t have to come from a box or be loaded with added sugar. This Blueberry Protein Overnight Oat Parfait combines simple, nourishing ingredients into a meal that supports energy, fullness, and a healthy relationship with food.
With protein, fiber, and real-food ingredients in every layer, this is the kind of breakfast that helps you feel cared for while still being something you genuinely look forward to eating.
