Broiled Caramelized Sweet Potato Rings
My friend, Karen, who I work with was mentioning how she makes her Sweet Potatoes. And, since I LOVE Sweet Potatoes, I thought I would give her method a try and it worked out great !!! I have not done much with the Broiler, for some reason it intimidates the heck outta me, but this worked out great and cooked the insides as well. So simple and a fun new way to make one of my favorite complex carbs!!! ;)
Ingredients~
Sweet Potato, sliced into rings
EVOO
Lite Salt
Pepper
Line Cookie Sheet with aluminum foil and place rings on sheet. Brush with EVOO , then sprinkle with Salt and Pepper. Broil on High for 15-20 minutes, keeping an eye out not to burn. When browned to your desire, remove and flip, and broil the other side 10-15 minutes or until browned. Serve with your favorite protein and veggie~ Enjoy :)
Spicy Tuna Romaine Boats
Are you looking for a quick snack or light lunch for around 150 calories, 7-8g carbs and 16g protein!? I have a quick idea that you can throw together in a jif with lotsa great flavor!!!
Ingredients~
2.6oz packet of Sweet N Spicy Tuna by Starkist
1/2 Tablespoon Veganaise
Handful of shredded Carrots
Fourth of a Red Bell Pepper, diced
1 Green Onion, diced
3 leaves of Romaine
Stir all together and divide into three and fill cavity of 3 Romaine leaves. Eat as a Boat, or roll and secure with toothpicks. Enjoy ;)
Chocolate Peanut Butter Protein Eggs
I could not be more excited with how these puppies turned out !!! They were DIVINE !!! And to all my friends, you now know what you will be receiving from me every birthday from here on out !!! I got this idea directly from Andrea's Protein Cakery, and I love that she makes all her recipes so simple to follow !!! That girl rocks and really knows her stuff !!! Each one of these chocolates is 127 calories, 2.3g carbs, and 6.04g protein. And did I mention they are sugarless and Vegan!? WIN WIN
Ingredients~
1/4 cup Natural Peanut Butter ( or just grind your own)
1/4 cup Peanut Butter Protein Powder
2 Tablespoons Chocolate or Vanilla Almond Milk ( I use the 30 or 45 cal/cup )
2 Tablespoons Coconut Oil, melted
2 Tablespoons Unsweetened Cocoa Powder
1 packet Stevia
Stir together the Peanut Butter, Protein Powder and Almond Milk til blended. Pat into 6 rounded egg shapes and sit on parchment lined cookie sheet and place in freezer for a couple minutes to set up. Meanwhile, stir together melted oil, cocoa powder and stevia. Remove eggs and dip into chocolate and place back on parchment paper and back in freezer to set up for a couple minutes, then repeat for a second coating. I topped mine with a few carob chips, which are optional. You could also top with an Almond. These are simply DYNAMITE !!! Be sure to store in the refrigerator if any are left after tasting them !!! Enjoy ;)
Fruit Pizza for two ;)
Cookies, Cookies, Cookies, ... I just can't stop with the GIANT cookies !!! And since I discovered the Giant cookie, I thought why not make two so your honey can have one too !!!??? .... ( and then I don't have to share ANY of mine ... ) All this for 232 calories,17.8g carbs, and 27.25g protein! I got my original idea of cookie making from Andrea's Protein Cakery, and from there my ideas have just kept flowin' !!! I could not be happier with the Fruit Pizza I put together, and hopefully when I go to bed tonight I will dream up yet another Giant Cookie Creation !!! ;)
Ingredients for Cookie~
3oz Apple, blended til smooth in Magic Bullet ( this was about half a Granny Smith Apple)
1/2 cup Vanilla Protein Powder
2 Tablespoons Coconut Flour
1 Tablespoon Lemon Juice
1/2 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
Dash Lite Salt
Mix all together, add a smidge of Almond Milk if too dry. Pat into 2 Giant circles on Silpat lined Cookie Sheet, and bake at 325 for 10-12 minutes or just until firm, making sure to not over bake. Maybe start checking them at 8 minutes. Cool and turn over to use flat side to frost and decorate.
Ingredients for Frosting~
4 Tablespoons Vanilla Protein Powder
2 Tablespoons Vanilla Almond Milk (30 cal/cup)
Mix and spread on cooled cookies.
Ingredients for Fruit~
1oz diced Mango
1oz diced Kiwi
1.5oz diced Strawberries
1/4 cup Blueberries
Divide all ingredients in half and decorate each cookie with fruit. Enjoy ;)

BLTC
If you want a quick delicious lunch or dinner, you will love this flavorful wrap !!! All for 215 calories, 7g carbs and 21.5g protein. I served these with the French Fried Carrot Sticks ( refer to my Blog for recipe), or just baby carrot and Light Ranch Salad Dressing would do. Easy dinner and easy clean up, and great tasting !!! Perfect combo ;)
Ingredients for four~
Flatout Bread, 90 calorie Light Brand
1/2 Tablespoon Vegeanaise per Wrap
Romaine Lettuce Leaves
Sliced Roma Tomato
4 Slices Turkey Bacon, cooked
8oz Grilled Chicken Breast, sliced
Sliced Red Onion, optional
Spread Flatout Bread with Vegenaise, and fill wrap with remaining ingredients. Enjoy any time of day ;)
Giant Peanut Butter Cookie with Chocolate Frosting
I have been on a cookie roll every since I discovered the Black and White cookie recipe from Andrea's Protein Cakery ( It Rocked) !!! Then I thought to my self, why not try to make a Peanut Butter cookie as well !!! Time to make another GIANT cookie for 239.2 calories, 10.5g carbs, and 28.75g protien. This may be my new passion, make one and you will want to drink the Kool Aid too ;)
Ingredients for Cookie~
1/4 cup Peanut Butter Protein Powder
1 Tablespoon Coconut Flour
1 Tablespoon PB2
1 Tablespoon chopped Apple, blended smooth
1 Tablespoon Egg Whites
1 teaspoon Almond Milk
1/2 Packet Stevia
Dash Cinnamon
Dash Vanilla
Dash Lite Salt
Mix all ingredients and drop onto Silpat lined cookie sheet and pat into a GIANT circle. Bake at 325 for 7-8 minutes, or just until firm. Do not over bake. Cool and flip over to smooth side to frost.
Ingredients for Frosting~
2 Tablespoons Chocolate Protein Powder
1 Tablespoon Almond Milk ( more if necessary to be spreadable)
1/2 Packet Stevia
Mix and spread on Cookie. Eat as is or store in refrigerator til ready to gobble up !!! Enjoy ;)
Black and White Cookies
I have a new BFF Andrea... no, she doesn't know I exist, ... no, she doesn't know my name, ... no, we have never met ... yes, I might have the early onset symptoms of creepy stalker syndrome developing ... but hey ...she's worth it !!! I stumbled across her on the Quest Facebook page for getting the "Recipe of the Week" the week after I did and I quickly fell in love with her FB page and Blog. You must check her out !!! Andrea's Protein Cakery is where I saw her Black and White cookie recipe and I couldn't get to the kitchen fast enough to start my own masterpiece. This could honestly be in the Mall Food Court, it is that decadent tasting! The other fun part is that this is a GIANT cookie !!! And how often are we eating giant cookies these days!? ... well alot now ... :0 The even better part is that is has 293.5 calories, 14g carbs and 42.5g protein. You could cut back on the frosting if you wanted less calories, carbs or protein as an option. Also, she suggested that you can make this into smaller cookies, ... but I gotta say there is just something sinister about the GIANT cookie that gives me a devilish grin on the inside ... but you can choose your own poison!!! Drink up ;)
Ingredients for Cookie~
1/4 cup Vanilla Protein Powder
1 Tablespoon Coconut Flour
2-3 Tablespoons chopped Apple
1 1/2 teaspoon Almond Milk
1 1/2 teaspoon lemon juice
Dash Vanilla
Dash Cinnamon
Pinch Lite Salt
Blend Apple, Milk and Juice in Magic Bullet, then add the rest of the ingredients til blended thoroughly. place on Silpat lined cookie sheet and pat in large circle. Bake at 325 for 7-8 min, or til firm (careful not to overbake). Cool and flip over to ice smooth side. Note: Feel free to make smaller cookies instead of one large cookie ... but... you will be delegated to the whimp kids club if you do!!! ;)
Ingredients for Icing~
2 Tablespoons Vanilla Protein Powder
2 Tablespoons Chocolate Protein Powder
4 teaspoons Almond Milk
1 packet Stevia
Mix each Protein Powder with half the Stevia and Milk in separate bowls. Add more Milk if necessary to get spreadable consistency, then spread the flat side of cookie with each icing. Eat or store in refrigerator! Enjoy :)
