Spicy Chipotle Beef and Black Bean Salad
Spicy Chipotle Beef and Black Bean Salad ain't for sissies... Take a walk on the wild side and turn up the heat one notch and see how much fun a little kick in the pants can be ... it might even put a little pep in your step! ;) This hearty dish can be considered a large dinner portion for 4 or a lighter serving for 6, macro's for 4 are 454 calories, 32g net carbs and 37g protein. But, since you have three nice sources of protein it can easily be turned into 6 servings at 303 calories, 21g net carbs and 24.5g protein. Either way, #justdoit !!! Ole'
Ingredients~
1 pound 96% lean ground Beef
Flavor Gods Everything Spicy
1 Low Carb Traditional Flour La Tortilla Factory Tortilla
Olive Oil Spray Pam
15oz drain Black Beans
11oz drained Corn
1/2 large Red Bell Pepper, diced
1/4 cup Salsa
1/4 cup BRIANNAS Chipotle Cheddar
1/4 cup SuperSeedz Somewhat Spicy Gourmet Pumpkin Seeds
2 Green Onion, sliced
Salt and Pepper to taste
Grill Beef into 4 or 6 equal patties using Flavor Gods Everything Spicy til medium rare. Meanwhile, spray Tortilla with Pam Olive Oil til lightly coated and sprinkle with Flavor God Everything Spicy to evenly coat, slice into thin strips and cut in half in the other direction. Bake at 450 for 5 minutes, remove and cool. In large mixing bowl, toss together Beans, Corn, Carrots and Red Bell Pepper. Top with Beef Patties, then drizzle Salsa over Beef followed by BRIANNAS Chipotle Cheddar. Sprinkle with Pumpkin Seeds and Green Onions, season with Salt and Pepper as desired. Serves 4 or 6, depending on appetite. A serving of 6 may be served on a bed of Greens to increase volume without increasing calories. Garnish evenly with Spicy Tortilla strips. Enjoy :)

Chow Mein Poppy Seed Salad

1 pound Chicken Breast
1/4 cup BRIANNAS Honey Mustard
Bed of mixed Greens
4oz Fuji Apple, chopped
6oz Grapes, cut in half
3oz Blueberries
1/2 cup Mandarin Oranges
1/4 cup shredded Cheddar Cheese
1/4 cup Chow Mein Noodles

Add Chicken and Honey Mustard to ziplock baggie and marinate overnight, grill and chop into bite size pieces. Cowboy Ranch Salad with Avocado and Corn Relish
BRIANNAS Ranch is more than a decadent topping! Using it as a marinade turned my Chicken Breast into moist fork tender bites of rich flavor that melt in your mouth. This is deceptively healthy and the macros prove it, each of the 4 servings are only 298 calories, 8.9g net carbs and 25g protein! Stats include 2 Tortilla Chips, 4oz Chicken, 1/4 Avocado, 1/4 Corn Relish and a Tablespoon BRIANNAS Ranch, but does not include bed of Greens. Perfect for lunch or dinner :)
Ingredients for 4 servings~
1/2 cup BRIANNAS Ranch
1 pound Chicken Breast
1 Low Carb LaTortilla Flour Shell
Spray Butter Pam
Flavor God Everything Spicy
1 fresh Corn on the Cob, cooked and cut from Cob
1 small Tomato, diced and drained on paper towel thru out the day
2 Green Onions, diced
Handful of Cilantro Leaves
Half of a fresh Lim
Salt and Pepper, to taste
Peeled and Sliced medium Avocado
Mixed Greens
Add 1/4 cup BRIANNAS Ranch and Chicken Breast to ziplock bag overnight in fridge. Next day Grill Chicken, meanwhile cook Corn on the Cob by boiling for 5 minutes, then shave from Cob. While Corn is cooling, spray Low Carb Tortilla with Butter Pam and sprinkle with Flavor God Everything Spicy, slice into 8 triangles, bake at 450 for 5 minutes, remove and cool. Mix Corn with Tomato, Green Onion, Cilantro, and drizzle with fresh Lime juice, then sprinkle with Salt and Pepper to taste. Add sliced Grilled Chicken to bed of Greens, top with Corn Salsa and Avocado slices around perimeter, top with 1/4 cup BRIANNAS Ranch. Serve 1/4 of the Salad with 2 Tortillas. Enjoy :)

Salted Caramel Turtle Protein Bars
Salted Caramel anything is my best friend. So, can you imagine my sheer joy when I invented Salted Caramel Turtle Protein Bar... of course you can ...cause now you will feel my elation when you make them too! This recipe makes 8 decadent Bars, each one is only 173 calories, 5.6g net carbs and 15.6g protein. Time to get your Salted Caramel on! :)
Ingredients for 8 Protein Bars~
Base Layer:
2 Tablespoons Chocolate Brownie Sweet Spreads, melted
2 Tablespoons Cacao or Cocoa Powder
1 cup 25 cal/cup Silk Cashew Milk
1/4 cup Swerve Granular Erythritol
1/2 cup Nutiva Coconut Flour
2 scoops Quest Chocolate Milkshake Protein Powder
Dash Cinnamon
Dash Vanilla

Middle Layer:
2 Tablespoons Vanilla Cupcake Sweet Spreads, melted
1/2 cup 25 cal/cup Silk Cashew Milk
1/4 cup Swerve Granular Erythritol
2 Tablespoons Nutiva Coconut Flour
2 scoops Quest Salted Caramel Protein Powder
Dash Cinnamon
Dash Vanilla

Top Layer:
1/4 cup Nutiva Coconut Flour
3/4 cup Walden Farms Pancake Syrup
1/4 cup Swerve Granular Erythritol
Dash Cinnamon

Garnishings:
48 Lily's Stevia Sweetened Dark Chocolate Chips (6 Chips per Bar)
1 Tablespoon Chopped Almonds
Mix each layer til well blended and chill in fridge til set, remove and divide batter into 8 equal parts (bottom layer should be approx 1.5oz, middle layer should be approx 1oz and top layer should be approx 1 rounded Tablespoon). Pat bottom into bar shape and line on Pam sprayed tray (may need to apply Pam to hands due to sticky batter), repeat process with middle layer and top on bottom layer, finish by topping with Caramel topping. Put 6 Lily's Chocolate Chips on each bar and sprinkle evenly with Pecan Chips. Store in fridge til set and Enjoy :)

Ingredients for 15 mini Tarts~
1 package 15 Athens Mini Fillo Shells
1 Tablespoon Maple Pancake Sweet Spreads, melted
2 Tablespoons Walden Farms Pancake Syrup
1 scoop Quest Salted Caramel Protein Powder
1/4 cup 25 cal/cup Silk Cashew Milk
1/4 cup Pecan chips
2 Tablespoons Swerve Granular Erythritol
1 Tablespoon Nutiva Coconut Flour
Dash Cinnamon
Dash Vanilla
Dash Maple Extract
Whipped Topping for garnish, if desired
Remove Fillo Shells to Silpat lined baking sheet and bake at 350 for 3-5 minutes til beginning to brown and crisp. While cooling, mix all other ingredients minus the Whipped Topping. Then fill each shell with mixture (a rounded Tablespoon) and chill til set, top each with Whipped Topping if desired. Store any left overs in fridge. These are simply wonderful, and would be great at any party. Enjoy :)

Peachy Peach Frozen Yogurt
Hello summer juicy fresh Peaches!!! Oh how I love you and want you in my life!!! So many recipes so little calorie allotments in one day ... But, I have an idea to cross that bridge with calories to spare! Follow along and see how this fluffy fruity mouth watering peach filled Frozen Yogurt will satisfy your palette guilt free! This makes 8 servings, each 3/4 cup is only 86 calories, 10g net carbs and 8.4g protein. Please don't let the summer pass without putting this on your to do list :)
Ingredients for 8 servings, 3/4 cup each~
12oz skinned diced fresh Peaches
5.3oz Peach Fage Yogurt
7oz 2% Fage Yogurt
1 cup Fat Free Half n Half
1 cup 25 cal/cup Cashew Milk
1/2 cup Lakanto Confectioners Monk Fruit
1 scoop Quest Vanilla Milkshake Protein Powder
Dash Cinnamon
Dash Vanilla
Mix all ingredients in blender til smooth and thoroughly blended. Pour batter into frozen freezer bowl of 2Qt. Frozen Yogurt-Sherbert and Ice Cream Maker and churn for 25-35 minutes til desired consistency. If you don't have a Cuisinart, then pour into casserole dish and put in Freezer, stirring every 45 minutes til desired consistency, probably about 3-4 times. Enjoy :)
Banana Cream Chocolate Chip Cookie Dough Tarts
I know you will find this hard to believe, but this really tastes like Chocolate Chip Cookie Dough similar to when you were a kid eating out of your momma's mixing bowl. So easy to whip together and so hard to keep your sticky fingers outta the batter! The batch makes 7 Tarts, each one is only 178 calories, 5.6g net carbs and 14.8g protein (macros don't include Whipped Topping). Good luck eating just one :)
Ingredients for 7 Tarts~
1/4 cup White Chocolate Sweet Spreads, melted
1 cup 25 calorie/cup Silk Cashew Milk
4 scoops Quest Banana Cream Protein Powder
1/2 cup Swerve Granular Erythritol
1/4 cup Nutiva Coconut Flour
Dash Cinnamon
Dash Vanilla
1.3oz (140 chips) Lily's Stevia Sweetened Dark Chocolate Chips
Whipped Topping for garnish if desired
Mix all ingredients except Lily's Chocolate Chips. Divide into 7 equals pieces and pat into flattened circle (may need to spray your hands with Pam to work with dough), top each Tart with 20 Chocolate Chips and garnish with Whipped Cream if desired. Chill and store in fridge. Enjoy :)
