No Bake Cookies








     Who doesn't LOVE a good No Bake Cookie!?  Nobody, that's who!  And how would you feel if you could have a healthy version!?  Good, that's how!  What do you think a serving is when each cookie is only 73 calories, 2g net carbs and 4g protein!?  Atleast 3, that's how many! ...unless it's dessert for dinner....then gimmie 5!  Lotsa choices, bunches of answers...final solution, just eat No Bake Cookies for a happy,  healthy, fun life!  ;)

Ingredients for 21-22 No Bake Cookies~
1/4 cup + 2 Tablespoons Coconut Oil, melted
1 scoop Quest Peanut Butter Protein Powder
1 scoop Quest Chocolate Protein Powder
1/2 cup Peanut Butter Powder
1/2 cup Cocoa Powder
1/2 cup Oats, uncooked
3/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount (use less if you want it less sweet)
1/3 cup 30 cal/cup Almond Milk
HEAVY dash Vanilla
HEAVY dash Cinnamon

     Mix together til fully incorporated, may be crumbly, but will harden in fridge so don't worry.  If you want more of a Peanut Butter flavor, then increase Peanut Butter Powder to 3/4 cup and reduce Cocoa Powder to 1/4 cup.  Weigh out 1oz portions and form into cookie shape and chill til set.  Enjoy  :)

Berry Cobbler










     A yummy Berry Cobbler is a great option no matter the time of year, especially if you take advantage of a frozen bag of Berries.  Good form, good fashion, good food!  So why not expand your horizons and enjoy Cobbler all year round!  For each of the 9 large pieces it is only 134 calories, 9g net carbs and 6g protein.  This is seriously delicious, get yours today!

Ingredients for 9 pieces~
1 pound mixed frozen Berries, thawed and drained to dry
1/2 cup Oats, ground to powder in Magic Bullet
1/4 cup Coconut Flour
1/3 cup 30 cal/cup Almond Milk
1/4 cup Coconut Oil, melted
2 Extra Large Eggs
1 scoop Quest Salted Caramel Protein Powder
1/2 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

     Drain thawed frozen Berries in colander or on Paper Towels til dry, set aside.  Mix remainder of ingredients til well blended and pour into parchment lined 8X8 and top with Berries.  Bake at 350 for 30 minutes.  Garnish with Whipped Topping if desired, not included in macros.  Enjoy  :)


Turkey Crust Pizza







     Dough no mo...hello Turkey Crust Pizza!  Why not!?  This high protein pie reigns supreme when it comes to a no carb carrier for all the things you love!  Each one of the 4 bases are only 222 calories, NO CARBS and 27g protein.  Then dress them as you will to your hearts desire, let your Pizza flag fly!  I filled mine with Sauce, Cheese, Mushrooms, Peppers and Onions for a total of 275 calories, 5g net carbs and 31g protein.  I call this the perfect meal!  :)

Ingredients for 4 Turkey Crust Pizzas~
1 pound 93% ground Turkey
1/2 cup shredded Mozzarella
1 jumbo Egg
Season as desired, I used a Garlic Lovers Spice ( I recommend Salt, Pepper, Garlic, Onion)

1/2 cup Pizza Sauce
1/4 cup shredded Cheese
1/2 cup sliced Mushrooms
Sliced Bell Peppers
Sliced Red Onions

Mix first set of ingredients til thoroughly combined, divide into 4 equal parts and pat into individual circles and lay on foil lined cookie sheet, bake at 400 for 20 minutes.  Remove and top each with 2 Tablespoons Sauce, 1 Tablespoon Cheese, 2 Tablespoons Mushrooms, Peppers and Onions~continue to bake at 400 for 7-10 minutes or til veggies are crisp tender and cheese is melted.  Enjoy  :)

Birthday Cake Protein Balls








     What ever the celebration, Birthday Cake Protein Balls will be a hit and add to the festivities!  Each of the 9 treats are amazingly delicious and have macros that are outstanding.  Surprisingly, they are only 87 calories, 3g net carbs and 5g protein.  Not sure if you want to consider these best for an afternoon snack or bedtime treat, either way or another way, you can't go wrong!  :)

Ingredients for 9 Protein Balls~
1/3 cup Oats, uncooked
4oz Cream Cheese, softened to room temperature
1 scoop Quest Salted Caramel Protein Powder
1/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
2 Tablespoons Almond Milk (I used 30 cal/cup)
Dash Cinnamon
Dash Vanilla

2 Tablespoons Coconut Oil, melted
2 Tablespoons Almond Milk (I used 30 cal/cup)
1/2 scoop Quest Salted Caramel Protein Powder
2 Tablespoons Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount (optional for extra sweetness)

1/2 teaspoon Sprinkles

     Add Oats to Magic Bullet, grind to powder, add to bowl along with remainder of first set of ingredients, blend well and divide into 9 equal balls, should be about 1oz each, rest in freezer to chill while making icing.  Meanwhile, mix second set of ingredients and blend til smooth and creamy, remove balls from freezer and dip in frosting and garnish with Sprinkles.  Store in fridge, best after chilled.  Enjoy  :)

Pancake Tacos








     What if you could combine Pancakes and Tacos...!?  Whelp, now you can!  And what can you expect when two wonderful worlds collide...flavor, texture, aesthetics, and nutrition!  #universalappeal  So start your day right...(or end your day right) and add Pancake Tacos to your life for only 392 calories, 29g net carbs and 39g protein!  Pancake on people!  :)

Ingredients for three Tacos~
1 scoop Cinnamon Roll ABS Protein Pancake Powder
1/3 cup Egg Whites
1/2 cup Water or enough til desired consistency
1 small Banana, diced and equally divided into thirds
1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips
1 Tablespoon Almond Milk
1 Tablespoon Pecan Chips

     Mix together first three ingredients til desired consistency for pancake batter, divide batter into three equal parts and fry in skillet on both sides til done, set aside.  Meanwhile, dice Banana and add down the center of each Pancake equally.  Add Chips and Milk to microwave safe bowl and heat for 20 seconds and stir til smooth, repeat if necessary, drizzle over Tacos and sprinkle with chopped Pecans.  Enjoy  :)  PS  Share or not to share, ...that is the question...

Frozen Yogurt Blueberry Cheesecake








     Quest gave me the inspiration to create a Blueberry Cheesecake with their Blueberry Cobbler Hero Bar,... thanks guys!  Each of these 8 hearty pieces are 332 calories, 10g net carbs and 24g protein.  Whether you have this for breakfast, dessert or just a healthy snack it's all good man...I think the macros can support any time of day.  So try this fun little experiment the next time you are hankering for fruit filled fare!  :)

Ingredients for 8 large pieces~
5 Quest Hero Blueberry Cobbler Protein Bars
2oz (1/3 cup, 66) Almonds
Rounded 1/2 cup (3oz) Blueberries
1 1/2 cup Swerve Granular Erythritol
Dash Cinnamon
Heavy Dash Vanilla
14oz net weight Extra Firm Tofu
8oz reduced fat Cream Cheese, room temperature
8oz Light Sour Cream
7oz 2% Fage Greek Yogurt
1-4 Tablespoons Lemon Juice, if desired

     VERY CAREFULLY shave that Blueberry goo with the White Chocolate coating from each of the Hero Bars, set aside.  Add Almonds to food processor til powdered (be careful not to process to butter), then add the 5 protein bar portions of the Hero Bar til fully incorporated and crumbly.  Press into the bottom of Spring Form pan.  Meanwhile, add the 5 Goo toppings to saucepan along with Blueberries, 1/2 cup Erythritol, Cinnamon and Vanilla til melted together and thickening, smashing as many Blueberries as possible, set in fridge to cool for 10 minutes.  Finish up by add Tofu, Cream Cheese, Sour Cream, Yogurt, Lemon Juice if desired, and last cup Erythritol to cleaned food processor and whip til smooth and creamy.  Pour on top of crust, and stir in cooled Blueberry mixture making a decorative pattern.  Chill in freezer til firm.  Enjoy  :)  PS  This freezes very firm, it took about an hour to thaw to easily cut, so I went ahead and cut all 8 pieces and put back in the freezer in individual containers...(I'm smart that way)

Edamame Pasta Pesto

Ingredients for 4 hearty servings~
8oz Explore Cuisine Organic Edamame Spaghetti
5oz Baby Spinach Leaves
4oz container Basil, approx 2.5oz net weight of leaves, use less if you want a milder flavor
1/4 cup shredded Parmesan, (extra for garnish, not included in macros)
1 large ripe peeled Avocado (approx 4oz)
1oz (1/4 cup) chopped Walnuts
1 Tablespoon fresh chopped Garlic
2 Tablespoons Sriracha
1 Tablespoon Lemon Juice, if desired
Salt to taste
Chopped Roma Tomato, for garnish if desired

     Prepare Pasta according to directions.  Meanwhile, add rest of ingredients (except for garnish) to food processor and blend til smooth.  Stir together with Pasta and garnish as desired.  I also served this over Grilled Chicken Breast and it was over the top delish!  Enjoy  :)
