Tater Tot Casserole
I have always loved Tater Tot Casserole, and not just because it comes from an old family recipe, it's just darn good... (who am I kidding, I'm a tender soul and actually do love the fact that it's a traditional family dish...but the fact it's delish is a major bonus). Over the years I have given it a proper make over to fit my lifestyle, and now each hearty serving is only 323 calories, 16g net carbs and 38g protein. So I'm inviting you into my heart and home to be part of my family, my health family, and serve this to your loved ones today!
Ingredients for 8 large servings~
2 pounds 99% lean ground Turkey
Seasonings as desired: Salt, Pepper, Onion Powder, Garlic Powder, Celery Salt
1 large chopped Onion
22.6oz Family Size Fat Free Cream of Mushroom Soup
13oz can drained sliced Mushrooms (yields 8oz drained)
1/4 cup grated Sharp Cheddar Cheese

Diced Red Bell Pepper for garnish if desired (not included in macros)
Sliced Green Onion for garnish if desired (not included in macros)
Spray 9X13 dish with Pam, crumble ground Turkey into pan, season as desired. Sprinkle with chopped Onion, then Soup, Mushrooms and Cheese. Layer uncooked Cauliflower Tots over top and bake uncovered for one hour at 350. Remove and garnish with Bell Pepper and Green Onion if desired. Enjoy :)

24oz Riced Cauliflower, thawed or fresh (I use the pre bagged in the frozen aisle)
2 jumbo Eggs
3/4 cup Seasoned Bread Crumbs
1/2 cup grated Sharp Cheddar
Mix all together, shape into Tots and line on Silpat lined cookie sheet. Bake at 375 for 20 minutes, flip and bake another 20 minutes or til golden brown.
Cauliflower Tots
When you think of Tots, it is usually considered a splurge food. Well now it's time to shift gears and think of it more as a veggie extravaganza (... or at least new and improved)! Check out these macros, each serving is only 148 calories, 12g net carbs and 11g protein. 24oz Riced Cauliflower, thawed or fresh (I use the pre bagged in the frozen aisle)

Chocolate Cottage Cheese

Peanut Butter Fudge Cake
You've heard me rave about my Blog Bestie Andrea from Protein Cakery, that chic is a genius!!! Not sure how she does it all, but I'm fine to ride her coat tails from recipe ideas to shopping her online store of Cookie, Cake and Bread Mixes (shop.proteincakery.com). Her Double Chocolate Protein Cookie Mix pulls double duty, it's great as cookies not to mention FROSTING!!!...yes FROSTING! Check out my recipe for this over the top creation. Each of the 8 slices are only 275 calories, 6g net carbs and 20g protein. This may be my best one yet, I even impressed myself! ;)
Ingredients for 8 slices~
1/4 cup Coconut Oil, melted
2 Extra Large Eggs
1 scoop Quest Peanut Butter Protein Powder
7oz 2% Fage Greek Yogurt
1/2 cup Betterbody Foods Peanut Butter Powder
1/2 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

6oz reduced fat Cream Cheese, softened

1/2 cup Swerve Confectioners Erythritol
2 Tablespoons 30 cal/cup Almond Milk

1 Quest Cravings Peanut Butter Cup, sliced into crumbles
Mix first set of ingredients, bake in Pam sprayed and parchment lined 9'' cake pan at 350 for 35 minutes. Remove, cool, and cut in half lengthwise. Meanwhile, mix second set of ingredients til smooth and frost each layer, then stack. Mix third set of ingredients, add to baggie, snip corner and drizzle over Cake, then top with Peanut Butter Cup crumbles. Store in fridge. Enjoy ;)
